I am wanting to find some new recipes for my family especially lunch recipes. My husband is on the picky side. He doesn't like things with brocolli or cream of mushroom soup, amoung some other things. I sm just sick of cooking the same things. My husband comes home for lunch a lot of the time and I feel like I make the same three things! Thanks

Hi B., I know what you mean about picky. We have been in
Virginia, a little over a year. My husband is about to go
IA to Afghanistan, and for his peace of mind is sending our two children and myself back home to Texas. I have a son who is 5, and a daughter who is 1. Does your husband like Sandwiches? I put a spin on mine and turn them into double decker club sandwiches. Buy his favorite cold cuts and cheeses. You can either toast his bread in a toaster, or give it a buttery taste and toast them in a pan. If he likes
lettuce, tomatoes, and pickles and onions is optional,
but these make it a treat. One of my favorite ingredients
is bacon. Heres a tip, fry all of your bacon at the same
time, when it is cooled you can put it in a ziplock freezer
bag and freeze. Also you can buy party toothpicks, the large
ones with the color paper glued to the end to give it a
professional look. This with some carrots and cucumbers and
ranch dressing on the side or just some chips, is a filling
and delicious meal for anytime. Another recipe is Nachos.
Fry up some ground beef drain the oil throw in a can of
Chili, i prefer wolf brand with beans. Stir it up till the
ground beef is covered completely with the chili. Put a layer
of Tostitos in a casserole dish or in a glass cake pan. Top
the chips with your meat sprinkle your favorite blend of
cheeses, and put it in the oven or microwave till the cheese
melts. Then for a great topping dice up some onions,
tomatoes, black olives and cilantro optional for a little

This is a quick, easy macaroni recipe and gets my husband and daughter to eat veggies.
Ingredients:
Velveta mac and cheese
Frozen corn
Frozen spinach
Other chopped or frozen veggies (I like squash and zuccini)
Cut up tomato
Parmesan cheese
When you boil the macaroni, add frozen and/or fresh veggies.
Drain and add cheese.
Add tomato
Add parmesan cheese (don't skip the parmesan cheese!)
My husband loves wraps. You can put so many different things in tortillas and eat them cold or warm. For lunch, we usually go with the prepackaged route - frozen food that's easily/quickly cooked in the microwave or oven. Pizza, taquitoes, chicken strips, etc. There are a LOT of recipe groups on CafeMom. You could check that out when you have time or even look on allrecipes.com. That's a fantastic site! Good luck! I know how aggravating it is to get stuck in a cooking rut.
