Hi there,

I am looking for a recipie to bring for a teacher's appreciation night. I want something fairly easy, but tasty!! Any ideas??

Buffalo Chicken Dip

1 bottle of ranch dressing
1 brick of cream cheese
2 cans of chicken chunks
1 bag of shredded cheddar
1 bottle of texas pete's hot wing sauce (not reg. hot sauce!)

mix everything together and put in baking dish. Cook at 350 for 25-30 minutes. Serve with tortilla chips and celery/

One that is super easy, and always very popular is for cocktail meatballs. Buy several bags of bite size or cocktail meatballs from the frozen section. The directions are often on the back, but basically, you cook in a saucepan on low - one 12oz bottle chili sauce and one 10oz jar grape jelly for each bag of meatballs. When the jelly starts to "melt", add the meatballs until warmed through. Then, throw in a crockpot for transport and to keep warm.

I think a pasta salad would be pretty easy and everyone likes that. I'm not sure if you are looking for a particular category.. main dish.. side dish.. dessert? I have my super popular chocolate pudding trifle if you have one of those footed glass bowls.. but.. the pasta salad is very easy..
I buy a package of the refridg. tortellini and cook it and cool.. a bag of romaine lettuce.. (not sure how big of a entree you are looking for.. you can double this it has to be larger.. ) and some fresh parm. cheese.. and a bottle of wishbone caesar dressing.. toss it all together and chill it well.. and everyone loves it. My sassy ole brother n law has NEVER complimented me and at christmas he said.. WHO made this salad..??

I was LOVIN IT..! He kept chowing down on it.. ha!

you can add whatever else you want.. I think I have put smaller tomato slices in there before and at christmas I used the tri colored ones.. and the green of the pasta and the red of the tomato was interesting.
or heck.. just buy the boxed pasta suddenly salad kind and jazz it up with tomatoes and black olive and some fresh black pepper.. throw it on a bed of green leafy lettuce..or just put it in a pretty bowl.

or do a nice cheese and cracker and fruit tray.. buy some chunks of cheese at aldi cheddar and another cheese..

and slice nicely and place in rows.. and then put a row of your crackers and put a side of green and red grapes to one side.. (grapes.. ! just like the other person said..) and I have put a little bowl of nuts on there.. and bam.. you have a very elegant platter.. put it on a nice platter or dish.. you can buy those fake silver ones at the card and party store..

Hash Brown Casserole is always a crowd pleaser.

2 lb. frozen hashbrowns, southern style or shredded
1 tsp. salt
1/4 tsp. pepper
1/2 c. onion (if you like onion)
1 container sour cream
1 can cream of celery soup
16 oz. sharp Cheddar cheese, shredded
2 c. crushed corn flakes
1/4 c. melted butter

Mix corn flakes with 1/4 cup butter; set aside for topping. Combine all ingredients, except topping. Place in buttered casserole dish and top with corn flake mixture. Bake in preheated 350 degree oven for 1 hour.
