Need Ideas for Party Appetizers

Sunday is my daughter's 1st birthday party. I'm needing to throw together some last minute appetizers for the adults. Any ideas? :)

Here are some idea's. Costco has these pre-cooked chicken wingettes, BBQ & Chili Lime etc. Cook them in the oven and serve with some type of dipping sauce (s) and make a veggie tray with up carrots, celery etc. and and then make a huge salad, just lettuce, tomatoes and cucumber because you don't know who likes onions, avocado etc. Also have a big chip and salsa bowl and everyone should be fine.

Ginger Chicken Sandwiches:

2 lbs cooked chicken, cut into approximately 1/2" cubes
1 cup mayonnaise
1 teaspoon dry mustard
1 tablespoon fresh grated ginger (1/2 teaspoon ground)
1 cup water chestnuts, drained and chopped
1/2 cup dried cranberries
2 green onions, chopped

The above measurements are approximate. If you like gooier sandwiches, add more mayo. If you love ginger, add more. Taste as you go!

Cut the crusts off of some bread, "fill" the sandwich, then cut into quarters and you will have some savory sandwich bites.

A fun thing to do is to look online for appetizers (or hors d'oeuvres) and see what you find. I've found some really terrific recipes that way.

I put out cheese (a variety-brie, manchega, cheddar, etc) and crackers/sliced french bread, nuts (spiced pecans, pistachio, cashews).

The meatball thing was already mentioned. Sometimes I just heat those in a pan too.

We've made roll-up with tortillas...THIN layer of... ham (regular or Italian), spreadable cream cheese (sometimes I mix in herbs or spices for a kick), a layer of baby spinach leaves. Then I roll it as tight as I can. wrap and let sit for an hour or so in the frig. Then I take it out and cut into slices, sometime on a diagonal. I also make them with only cheese for my kosher friends.

On a small skewer put a cherry tomato and basil leaf.

In those mini cupcake pans I make mini quiche.You can use ready made crust (not cooked and in a roll) get by eggs and cheese in most stores. I cut circles out with a soup can (emptied some time ago), and push them into the holes in the pan. Mix 9 eggs, 1/2 milk, cheese (as much as you like. We like a lot...1 to 2 cups), season with salt/pepper and anything else that you like...sage, terragon, rosemary, etc.)pour into cups- about 3/4 full. Bake on 375 until done. They are tasty.

I was just at a party that served, roasted lamb ribs. They were a bite or two, I hear.

Some of my favorites are:
marinated mozzerella balls/grape tomatoes/basil on skewers
"pigs in a blanket" - lil' smokies with biscuit dough wrapped around them (I seperate some of the layers and then cut the pilsbury flakey biscuits in half and wrap around lil' smokies. bake according to biscuit directions. Serve with bbq sauce, mustards, and ketchup

Both are super easy and crowd pleasers! Have fun and good luck.

This will sound gross, but Pigs in a Blanket! Those little tiny hot dogs, wrapped in puff pastry triangles. I know, you're thinking, WHO EATS THOSE? Which is what I thought when the caterer for my daughter's 6th birthday party suggested them. But she insisted that they're always a big hit... and guess which appetizer tray was empty 30 minutes into the party? Yep, the darned pigs in a blanket. Who knew? Apparently they are easy to make. I'm a complete disaster in the kitchen so I wouldn't know...

If you have a Trader Joes near you, it's a great place to find party appetizers that just need heating, if even that. They have all sorts of frozen "pastry bite" type things, and these mushroom turnovers that are really delicious. They also have a really nice cheese selection...you can put a few different types out with some grapes and nuts, crackers and/or a sliced baguette. All things you can get at TJ. I also had a "kiddie buffet" at my son't 1st with bowls of Cheerios, goldfish, and freeze dried fruit snacks. They loved it.

Meatballs in a crockpot with some BBQ sauce or Maple Dijon sauce (I'm a TSG consultant, that's my only plug, let me know if you're interested ha ha), cheese and crackers, bread and spinach dip or Artichoke jalapeno dip, vegetables, mini hamburgers, make your own sandwich platter, etc.

I don't have a name for this but I got the recipe from my MIL: slice up a baguette, spread on Rondele (sp?) or any other similar speadable cheese, put on a piece of sliced pear, warm up in the oven briefly & then top off w/a dash of cinnamon. Tasty, simple & quick. My boys & other kids have liked them just as much as the adults. It's a nice combo of sweet & salty.

I did these for New Year's--Trader Joe's has good crab cakes, Costco has these wonderful puff pastry hors doeurves--four different types: artichoke, brie and carmalized onion, roasted garlic and a cheese, and another one, plus they had pepperoni and mozz rollups. These were super easy and very tasty. I added a relish tray on the side to cool things off and as an alternative.

Tortilla roll ups. Spread cream cheese on tortilla. Sprinkle with green peppers, olives, shredded cheese, salsa, whatever sounds good. roll and slice.
Cocktail sauce poured over cream cheese, served with crackers.

One of our faves for parties is pepperoni stromboli. Buy a pack of ready-made dough, roll it out, spread layers of pepperoni and mozzarella cheese, wrap on all four sides, flip over, brush w/ butter and bake in oven for 20ish min. at 250.

I'm using already cooked meatballs (can buy the frozen in a bag at the store), thaw out, wrap them in uncooked croissant dough and cook in the amount of time the croissant dough says...yum. You can dip them in marinara sauce if you'd like, or even melt mozzarella cheese over them too.

this will sound gross but is really yummy and you might have everything already. 1 cup shredded sharp cheddar cheese, 1 cup chopped yellow onion and 1 cup mayo. mix, heat in oven, stirring occasionally. serve with sliced sourdough. i had this at a friends house and was shocked at how easy and yummy it was. i used light mayo, but still not a healthy app. don't use light cheese because it doesn't melt as well. develed eggs are another easy big hit. vegie tray with ranch dressing dip. a cheese and cracker platter, the kids will like that too. good luck and have fun!

Deviled eggs. You can actually throw some things in like making ham and cheese deviled eggs, or steam some veggies and put them in there too... as well as the traditional ones or the ones with caviar on top.
