Hi moms... I am having a surprise party for my husband and we are just going to do some finger foods and little appetizers. Then if we still have family here I was just going to do a couple of casseroles for dinner. I just wanted to pre-make them. Well I'm in a rut I always make the same things and I am looking for something different. So if any of you have some ideas or recipes that you would like to share that would be great. Thank you all so much!

I have made the Ritz Cracker Casserole and it is good! My family loved it. My family hit is Enchilada Casserole and EVERYONE wants me to make it all the time and it freezes really well.

Glo's Enchilada Casserole
2 lbs ground beef browned and drained
1 package corn tortillas cut into 4 pieces
1 can cream of mushroom soup
1 can cream of chicken soup
1 large package shredded cheddar or Mexican Blend Cheese
1 can enchilada sauce (Mild or Medium or Hot depending on your taste)
1 small can chopped green chilis
*Combine browned hamburger meat with cream of chicken and cream of mushroom soups. Add in chopped green chilis and enchilada sauce.
*Lightly spray the bottom of your baking dish with Pam and layer corn tortillas on the bottom.
*Top the corn tortillas with the ground beef & soup mixture then top with cheese then another layer of corn tortillas.
*Repeat layers and top final layer with cheese.
*Bake in 350 oven until cheese melts and is bubbly or freeze as is for later.

You may not use all of the corn tortillas so I just bake the rest of the package for chips. I usually serve chips, hot sauce, sour cream & guacamole with it. Everyone likes something different. I usually will also put Spanish Rice, Pinto Beans and salad with it if I have a lot to feed. It is super easy and pretty inexpensive.

I also half the recipe for our family and use creamy chicken mushroom instead of 2 cans of each or you can make double and freeze half.

This Hashbrown Casserole is always a HUGE hit at our parties and reheats very well. Have fun!

2 boxes hashbrowns (they have them by the instant potatoes in the grocery store)
1/2 C. onion, chopped fine
1 1/2 - 2 C. Colby cheese, shredded
1 1/2 cans cream of chicken soup

Optional: I like to add chopped jalapenos to the mix.

Cook hash browns, onions, and season to taste in a skillet. Then mix together cheese and cream of chicken soup in a separate bowl. Add hash browns to mixture, then transfer into a casserole dish (spray the dish with a little Pam) Cook at 350 for 30 minutes or until golden brown.

Ritz Cracker Casserole
shredded, boiled chicken breast (2-3 large)
2 cans of cream of chicken soup
8 oz of sour cream
poppy seeds
one roll of ritz crackers
2-3 tbsp butter, melted

mix chicken, soup and sour cream along with a sprinkle or two of the poppy seeds into the cassrole dish. crush crakers and layer on top. add butter. bake at 350 for 20 minutes

this one pre-makes really well - just mix everything together except for the crackers and butter - throw those on just as its getting into the oven. :)

1. Avacado dip and chips: Tortilla chips, 1 tub sour cream, 1 packet ranch powder dip, 2 avacados (1 if they are not on sale...)Mix it all together and serve. You can sprinkle cayan powder on the top for extra zip.
2. Cream puffs: buy them in the freezer section of HEB, arrange on a pretty plate, sprinkle with powder sugar. Done.
3. Buy a brie round, pour canned bluberry pie filling over the top, arrange with crackers. Cut a wedge out ahead of time.
4. Meatballs in a crock pot with grape jelly and bbq sauce, serve with toothpicks.
5. Pinwheels: Spread herb cream cheese over an open tortilla, layer thin sliced ham. cut into 1 inch strips, roll a green pimento stuffed olive in each strip.
6. Fruit Fluff (to die for...) Mix whipped cream and cream cheese. serve with cut fresh fruit on toothpicks (whatever is on sale) pineapple, bananas, strawberries, melon balls.
7. Fruit skewers: cut up fresh fruit, serve on skewers with fruit fluff. Serve the skewers sticking out of a watermelon or cantalope half shell.
Garnish everything with fresh kale and cherry tomatoes for an added something.
Have a fun evening.

Hey there!!

This one is always a hit in my house!!

Take some boneless, skinless chicken breast. Broil them on each side for five (5) minutes in the oven. Peel and cut potatoes, carrots, and onion (optional) and place over the broiled chicken. Be sure and season the veggies to taste. Take two cans of cream of mushroom, mix them with a little water and milk, then pour the mixture over the chicken and veggies. Cook it for at least 2-3 hours on 350. The chicken will fall apart and the veggies will be perfect and flavorful!!

Hi M..

I am a sahm of 1.....and chef so i can help!!!!
Do you want to make a few meals ahead and freeze them?
How many people. I do not want to have you make enough to feed an army but everything freezes well!!!!

How many meals do you need?

1. I suggest you start with a Potroast. Are you a costco member? If not be sure to get a "first cut" large potroast at the grocery store.

grocery list:
Potroast or briscut cut of meat
1 package LIPTON onion soup mix <or 2 if meat's over 8 lbs)
2 cups red wine (or 4 if meat's over 8 lbs)
egg noodles, broad 1 or 2 bags
frozen peas.
butter
1 package of HEAVY DUTY aluminum foil.

If you are ambitius you may trim alot of the fat off the top or the meat. Lay 2 pieces of the aluminum foil in a cross.
Place the meat in the center. shake the dry onion soup on the top. bring the edges of the foil upand poor in the wine. VERY tightly wrap the foil to make a cooking vessel out of it. Bake at 350 degrees for 30 min per pound of meat! Usually around 1 1/2 - 2 hours.

Let cool a bit
Unwrap carefully, use a fork to check done.
Save all the liquid!!!!
Cool potroast and cut...against the grain!
Put in Microwave or oven safe dish with the liquid...<GRAVY>

On the day of meal...Heat the meat, de frost the peas in warm water and you can cook the noodles, add a bit of butter and s0me of the hot gravy toss in the peas.

THen serve the meat over the noodles and peas

you can cook the noodles ahead and mike them too!

I know you wanted to cook...but a couple of years back I had a surprise party for my husband and called Blue Mesa. They have various menus / items to pick from and it's sooooo easy!! They come in and lay everything out...disappear and then come back when you tell them and pick it all up. No mess for you and you get to visit with your guest the entire time!!

I think you've gotten some great responses. This was what I recently did for my son's first birthday. It was from 3-5 but I knew some people, particularly family, would stay late so I made this casserole in the morning and just pulled it out of the fridge and stuck it in the oven when the party was technically over at 5 and we had dinner around 6. I made some queso and bought some premade quacamole and some chips and we had a great spread. I also bought a mexican style bagged salad to balance the meal a little.

Chicken Enchilada Casserole

1 pound cooked chicken parts w/o skin (you can used canned chicken)
2 cans Cream of Chicken soup*
1 can Cream of Mushroom soup*
1 can Cream of Celery soup*
1 can Rotel, drained
1 small onion, minced (can use dried onion)
½ cup jalapeno peppers, chopped (optional)
8-12 tortillas, corn or flour (your preference, I use corn)
4 ounces Colby Cheese, grated/shredded**
4 ounces Monterey Jack, grated/shredded**

*Campbell’s Healthy Request makes the recipe a little healthier and lower in fat
**Kraft sells an 8 oz. package of shredded Colby and Monterey Jack combined

Cook chicken and shred into bite size pieces.
Combine soups, jalapenos, onion, drained Rotel and set aside 2 cups.
Now combine chicken and the soup mixture. Mix well.
Layer bottom of 13x9 baking dish with tortillas and pour in filling.
Place a layer of tortillas over mixture and then cover those tortillas with 2 cups of soup mixture set aside previously.
Cover top of casserole with shredded cheese. (I highly recommend non-stick foil)
Cover and bake for 50 minutes at 350 degrees. Remove cover and continue baking for 10 minutes or until cheese is melted and bubbly.

In this case, I did everything in the morning
except top with cheese and then stuck it in the fridge. When I was ready I pulled it out, topped with cheese and put it in the oven. I may have cooked it a little longer since it was cold.

Sun dried mangos or peaches (I get mine from Sam's)
Bacon (turkey or regular)
Pickles Japalenos (as my daughter calls them)
Toothpicks

Take the fruit place a japaleno on top wrap with 1/2 piece of bacon, secure with toothpick, and put in the oven for on 350 until the bacon is done.

A girlfriend of mine gave me the recipe and told me they would be the first to go at my Silpada party ,and she was exactly right. Also I'm sure you could use any kind of dried fruit. Good luck and Happy Holidays!

Here are a few quick easy appetizer ideas:

Green Chile Artichoke Dip:
1 8oz. package of cream cheese- softened
1 small (the tiny one) can diced green chiles
1 small jar marinated artichoke hearts- drained & chopped
1 cup shredded cheddar cheese (or a enough to cover top)
2 french or sour dough baguettes cut into 1/2" slices

Preheat oven to 350
In small casserole dish mix together 1st three ingredients.
Sprinkle cheddar cheese over top of mixture.
Bake in oven for 25 minutes or until cheese is melted and bubbly.
Broil on high for 2 minutes (or less) until cheese is slightly browned.
Serve with bread slices.

Easy Pigs in a Blanket:
3 cans Pillsbury crescent rolls (original)
1 package Lil' Smokies sausages

Preheat oven to 350.
Pop open crescent roll cans.
Remove triangles and cut them into halves lengthwise using kitchen sheers or a sharp knife. You should have 2 skinny triangles now.
Starting with the flat end of the dough triangle, roll a Lil' Smokie up in the dough.
Bake on a cookie sheet for 12 minutes or until golden.
Serve with mustard.
(you can make these fancy by sprinkles sesame seeds on top or adding a sliver of jalapeno or cheese if you like, but they are perfectly good plain)

Easy Bruschetta:
8 slightly firm roma or plum tomatoes- diced
1/4 cup grated parmesan
1/4 cup fresh basil- chopped
2 cloves garlic- minced or garlic pressed
1 Tbsp extra virgin olive oil
1 lemon cut in half
butter
1 loaf bakeable french bread sliced into 1/2"-1" slices

Spread butter on french bread slices and bake according to directions.
In medium bowl, combine first five ingredients. Squeeze in juice from lemon halves and stir to combine.
Serve atop warm bread slices.

Jalapeno Jelly Appetizer:
1 8oz. block cream cheese
1 jar jalapeno jelly
1 box favorite crackers

Place cream cheese on serving plate.
Pour half jar of jalapeno jelly atop it.
Serve with crackers.
(this is so good and goes fast, so it's always good to have a back up).

The favorite at my house is cheese enchilada casarole.
You need shredded cheese 1/2 Velveeta (or generic equivalent)& 1/2 cheddar When grating the cheese, put the velveeta in the freezer for about 20 to 30 minutes to make grating easier. Start with the soft cheese and swap back and forth with the cheddar ending with the cheddar. (The cheddar cleans the soft cheese from the grater.)
12 to 20 tortillas (I use corn)
1 large can of chili
chopped onion is optional

You start with a little chili on the bottom of the casserole. Layer of tortillas. Layer of cheese (sprinkle onion here if using it) Layer of tortillas. Little chili.
Repeat as many times as you want finishing with the chili layer on top sprinkled with come cheese mixture. Bake at 350 for 45 minutes to an hour or until bubbly.
A pre-packaged salad will round out the meal. (I keep pre-packaged salads around. Just open and pour it into a bowl. No muss, no fuss, no work!

Isn't it neat that I have my recipe box right by the computer?

Jambalaya

1 package of smoked sausage
1 8oz. can tomato sauce
1 cup uncooked white rice
4 green onions
1 cup water
garlic powder and parsley

Sprinkle garlic powder and parsley over chopped sausage. Fry with chopped onions for about 10 minutes in skillet. Add rice and stir. Add tomato sauce, water, garlic powder, salt and pepper to taste. Cover and let cook for 30 minutes.

Hi, M.. I am an Independent Distributor for Homemade Gourmet, so naturally most of our meals stem from there. How many "family" members do you expect to feed? I have several suggestions, probably more than I could list here. Do you like SW or Tex Mex? We have a great Southwest Casserole mix that is one of my favorites. Along with Black Bean Salso and a Cool Lemonade Cheesecake....you are set. Or, how about 2 pots of chili? I always make two for different tastes. Bonnie's Blue Ribbon Chili has a bite for those who like it a little spicy and No Alarm Chili is for those who are wussies (like me). Again the Black Bean Salsa and Cool Lemonade Cheesecake are great. Like I said, there are many other choices...Sunday Roast (use a crockpot) Cranberry Chicken (oven), Sunday Roast Chicken (crockpot), etc., etc., etc.

Wow! After reading the replies, I'm super hungry now!
I know this might sound strange, but make a regular broccoli, rice, and cheese casserole. You can refridgerate it or even freeze it until time to use it. Before you serve it (after it's heated and ready to go), crumble Cheez Nips on top of it. I know it sounds gross, but it's REALLY good! Everyone will ask you for the recipe!

i have always got great comments about this little appitizer.

tortillas with cream cheese and chives. rolled and chilled then cut into rings and serve with hot sauce.

OK, this is the easiest casserole ever and everyone likes it!

shreaded chicken cooked
1 can cream of mushroom soup
Chicken rice a roni
shreadded cheddar cheese

I buy the roasted whole chickens in the deli and shred it myself. Prepare rice a roni and put it in the bottom of a baking dish. cover that with the chicken, then spread the soup on that, and cover with cheese.

Bake at 350 for about 30 minutes. it is already cooked so this is to heat it through and melt the cheese.

This is good served with some italian green beans. Just put canned green beans in a tupperware dish and pour a small bottle of zesty italian dressing and marinate in the fridge for a few hours or longer. These are served cold and are so good!!

I just went to a holiday party and they really had some great appetizers! I later found out that everything came from Sam's. You should go if you ahve one near by, they have lots of WONDERFUL finger foods. Have fun!

For our parties I always get some precooked meatballs and thow them in the crock pot with a can of enchilada sauce and a cup of grape jelly. Sounds weird I know, but it's delicious! Depending on the amount of meatballs you want you can double the sauce and jelly. They are a sweet-n-spicy hit!

Another crockpot favorite is lasagna. It's easy to make and tastes WONDERFUL! Here's the link to the recipe: http://www.recipezaar.com/21706 - you can change the number of servings so you'll know how much hamburger, etc. to brown. I use diced garlic in the jar instead of doing it myself, I think it works better that way.

Tortilla Rollups - Cream cheese with diced ham and green chili's mixed in. Spread on tortilla. Roll up. Cut into slices.

taco soup -
Cook 1 lb ground beef. Add 1 can of the following -
Black Beans
Rotel
Mex Corn
Add 1 package Taco Seasoning and 1 package Ranch "powder" (the stuff you mix with sour crm to make ranch dip)
Serve with Sour Cream, Grated Cheese.

Layer Meatball Bake from Kraft Food & Family magazine

Pre: 5 min Total: 30 min

1 Pkg (6oz) Stove Top stuffing mix for chicken
1 can (10 3/4 oz) reduced sodium condensed cream of mushroom soup
1/4 cup milk
1 pkg. (1 lb.) frozen meatballs
2 cups frozen peas
1 cup Kraft 2% milk shredded reduced fat cheddar cheese

Preheat over to 400. Prepare stuffing mix as directed on package for light preparation; set aside.

Combine soup and milk in 13 x 9 inch baking dish. Stir in meatballs and peas; sprinkling with cheese. Top with the prepared stuffing.

Bake 20 to 25 minuted until heated through.

Makes 6 servings.

I guess you might need to double it, depending on how many people you have. My kids and husband loved it!! I'd never had a meatball casserole before this. If your not a big fan of reduced fat cheese, just get the regular.
