This was a favorite for my toddler who is 15 now and STILL loves it. Cook up rigatoni, the bigger the better! I cooked it extra long to make it softer depending on the age. Mix up spinach (Frozen then thawed and squeezed dry), one egg, some cottage cheese. Salt and garlic to taste or leave plain. Using a Cookie Shooter, pastry bag filler, or knife, stuff the pasta with the spinach mixture. Microwave in a shallow dish covered with saran and a tiny bit of water 2-3 mins. Let cool before serving. It will resemble mini cannelloni your toddler can eat as finger food. Can be frozen and reheated in the microwave. Sorry I don't have amounts. I just eye ball it.

here is a recipe from allrecipes.com that I've made a few times now and we've all enjoyed it!

I actually use Parmesan in place of Provolone cheese, and I follow the reviewers suggestions :-) You can add tomato chunks to it, too. I use soy milk in place of cow's milk since both my kiddos are sensitive to cow's milk.

I have an easy mac and cheese recipie that is yummy! Just boil what ever kind of noodles you want. Then drain. In the pot that you boiled noodles in, melt about a 3 in cut of velveeta cheese, a can of cream of chicken soup and a 1/2 can milk. When melted stir in noodles. Very yummy and easy! My kids will not eat easy mac, but love this stuff. Enjoy!

Preheat oven at 350 degrees. Boil your noodles (Any kind) and put on the side to drain. Pour some 2% milk or your favorite kind in a pot on a low fire and add some evaporated milk and gradually any type of cheese you like to it. (I use mild or medium cheddar, mozzarella, monterey jack and american, or whatever is in the fridge!) Keep stirring until cheese is melted and all is mixed well. Mix with pasta and place in baking dish (glass works great!) and bake for about 30 minutes covered with Reynolds aluminum foil. Check occassionally to see if it's done. (Everything is cheesy, smoking hot and sticking together.

I don't measure anything, just alter you recipe to what you like. The key is to make the sauce a little loose (not watery) by adding more milk after mixing if you want so it wont be dry and too thick, but cheesy and soft! Good eating! foodnetwork.com is a great sight for recipes!

Maria,

I love pasta and eat tons of it. I love mac & tomatoes. Just cook your pasta and add diced tomatoes or just tomato sauce along with about 2 T. butter salt and pepper. If you are hungry for cheesy mac, just boil your mac and add velveta cheese cubed, and as little or as much as you wish, of course always add some butter to your recipe. I also like to add a little sour cream to my cheesy mac.

Now if you want to go to the trouble of doing the cheese sauce thing then take a sauce pan, melt 2 tablespoons butter add 2 tablespoons flour, cook for a minute then add your chicken broth, milk and make a "gravy" when it is the desired thickness add your grated cheedar cheese, or combination of cheeses, or how ever you want it.

Flavor it up with broths, also something good is to add a little milk and a teaspoon or two of sugar to your mac and tomatoes along with your salt a pepper. Gives it a creamy taste.
