I have a ton of spearmint growing in my garden. Anyone have any good recipie ideas (besides mojitos... I've got that covered! ;-D ) ?

I like to put a sprig of mint with the water in each ice cube section on the tray. Mint ice cubes! I like them in water and sprite myself.

My grandma used to make and can mint jelly. I don't have a recipe but I'm sure you could find one online. I absolutely loved it as a kid. Sounds kinda gross but it really was good.

If you make beef soup, add a couple of sprigs about 10 minutes before it is done. It gives a great extra flavor. You can then leave it in or remove it. You can also freeze it for later use.

I had this summer salad at a restaurant downtown - so good.
Watermelon Salad

Watermelon
Lemon wedges
mint leaves

put in a bowl and serve

squeeze the lemon all over and enjoy. delicious and refershing.

also mint in lemonade is excellent

you can add spearmint like a herb to salads.

mint tea is great for stomach trouble too.

rub on temples to reduce headache sympthoms.

mint pesto (you can google the recipe) You will find lots of recipes for mint on the food network site. I mix it with other herbs and marinate chicken and other meats with it. Lamb chops and mint is very good. You can also use it in taboule(spelling). put it in salads, fruit salsas, Ice tea and lemonade.

For saving it for later in the year for everything from lamb to cous cous to "I'm sick of winter" mohitos... you can also put a bunch in a blender, add a little water, pour into little ice cube trays, freeze, and ziplock for almost-fresh mint any time.

Check out greek & middleastern recipes... a LOT of which use fresh mint.

just dry it and crumble some in your hand, potpourri, throw on the fire, or make tea in the middle of winter when that sweet breath of summer is so welcome.

You can make pesto with it. Use mint instead of basil. It's different and quite excellent on pasta. Then you can add whatever you want-- eggplant, zucchini, very cool.

It's also a good garnish for sorbet but generally one doesn't eat garnishes even though one can.

You can also be swanky and offer the leaves to your guests to chew on between courses to clear their palates!
