My mom always takes a normal meatloaf recipe and she makes that up flattens it out and then rolls ham, mozz cheese slices, black olives and mushrooms into it put it in a pan to cook.

I'm looking for a simple, yet flavorful meatloaf recipe. My husband doesn't have very fond memories of meatloaf, he said his mother's was very bland. I've eaten very good meatloaf, but I don't have any recipes. Thanks:)

I have the best recipe I think, its not the healthiest but it is rally hearty and tasty.
1 to 1.5lbs of ground sirloin
2 to 3 eggs
1 1/2 cans of tomato sauce (reg size can)
minced onion to taste
2 - 2 1/2 cups of Quaker Oatmeal
Salt and Pepper to taste
Combine meat, eggs, minced onion, salt & pepper,Oatmeal, and 3/4 of can of tomato sauce and mix with hands until blended.
Put half of the meat mixture in a glass meatloaf pan, pour more tomato sauce and put remaining meat mixture on top with minced onions sprinkled on top too. Bake @ 350 for 45 to 50 minutes. When done, turn loaf over onto plate and pour remaining tomato sauce on top with minced onions sprinkled on top also. Its yummy. Its kinda heavy so I serve it with rice and a veggie.

I use 2 lbs. of frozen turkey burger, 1 row of club crackers smashed, 1/4 bottle of bbq sauce, 1 onion chopped, and 1 egg. I just mix it all together and bake. I actually put it in a 9 by 9 pan instead of a loaf pan. You can choose different types of bbq sauce for flavor. It's a hit with my whole family, even my 7 year old son says yeah it's meatloaf night!
Here is a very simple one and it isn't dry like paper.
HOMESTYLE MEATLOAF
2 eggs, beaten
1/2 cup ketchup
1/2 cup milk
1 cup Italian bread crumbs
1/4 cup onion
1 lb. ground beef
Heat oven to 350 F. In large bowl, combine all ingredients; mix well. Press mixtlure into ungreased 8x4 inch loaf pan. Bake at 350 F for 40 minutes. Remove meat loaf from oven. Spread 1/4 cup ketchup evenly over top. Return to oven; bake an additional 20 minutes. Let stand 10 minutes before serving.
You can add mushrooms in this or any number of things. My husband and kids love this meatloaf. Try it and let me know what you think...

The one my family likes the best is from the Food Network website, under Alton Browns section, the Good Eats Meatloaf. It's a little spicy, and never bland. I also tend to add in a little extra breadcrumbs, and use honey or Honey bbq sauce in it, for added flavor/texture.. Believe it or not, it doesn't taste bad, or out of place.
Hi Kelly - Homestyle meatloaf with gravy to match
2 pds ground sirloin
mix chopped onion, a little bit of wortchester sauce, 1 package of crackers and 4/5 eggs, salt and pepper, 1 can of mushrooms.
Mix all together with meat.
Put into a regular pan and cook for about 10 minutes at 425 degrees. Take out the meatloaf and put 1 can of cambell's mushroom soup on the top and bake about 30 minutes or until meat is no longer pink.
GRAVY
2 cans of mushroom soup
2 cans of water
droppings from the meatloaf
salt and pepper
thicken with a Beef based thickening for soups.
My family has never made meatload with ketchup or anything like that. Hope you like mushrooms.

We love this meatloaf.
We are actually vegetarian believe it or not, so we just substitute veggie meat for the ground beaf.
1/2 cup margarine
1 large onion, chopped
1/2 pound velveeta
6 slices whole wheat bread, cubed (or stuffing works, too)
1 1/2 lb ground beaf ( or veggie burger)
1/2 tsp ground sage (or thyme)
1/4 tsp garlic salt
4 eggs
Sauce -1/4 c ketchup, 2 tbs water, & 2 tbs brown sugar (I actually recommend tripling this sauce, because it is so yummy)
saute onion in margarine, lower heat and add velveeta. Stir until cheese is melted
In other larger bowl, combine burger bread sage, salt and eggs. Add cheese and onions. Mix well. Pour into a greased 9"x13" dish
In small bowl, combine ketchup, water and brown sugar. Pour over meatloaf. Bake at 350 for 45 minutes.
And enjoy. Its great as leftovers, too. I am totally in the mood for meatloaf now.

Maccormick has a spice pack for meatloaf that comes with a steam bag. The directions are on there, but I add warchteshire (sp?), onions, 1 clove minced garlic and a bit of ketchup. you shape it, put it in the bag and fill it with carrots, celery, potatos and onions. Everything cooks at once and is so good, my husband asks for it all the time!
2lbs ground round
1 egg
1 packet Mrs Grass Onion Soup Mix
About a cup of plain bread crumbs
A little bit of water
Just mix it altogether
Oven at 350 for about an hour
you will have to drain some fat about halfway through

Hi Kelly! That is so funny! I was in search for a good recipe on Sunday and this is what I found on www.kraftfoods.com - Favorite Meatloaf is the name. It was so yummy & the kids loved it!! But the best part was, it was so simple to make! The recipe made enought for 2 loaves, so I froze one ;) I hope you like it as much as we did.
Favorite Meatloaf
1 cup finely chopped onions (about 1 large)
1/4 cup KRAFT Light Zesty Italian Reduced Fat Dressing
2 lb. extra lean ground beef
3/4 cup ketchup, divided
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 egg whites
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Sharp Cheddar Cheese
PREHEAT oven to 375°F. Cook onions in dressing in large nonstick skillet on medium heat 8 to 10 min. or until golden brown, stirring frequently. Remove from heat; cool slightly.
COMBINE meat, 1/4 cup of the ketchup, the stuffing mix, water, egg whites and onions; mix well. Place meat mixture in 13x9-inch baking dish; shape into 10x5-inch oval loaf. Spread with remaining 1/2 cup ketchup.
BAKE 55 min. to 1 hour or until cooked through (160°F). Sprinkle with cheese; bake 2 min. or until cheese is melted.
hi I used to be the same way. something about my mom's meatloaf made me never want to eat it or make it after moving out on my own but now we make it like once a week. we use the liptons dry onion mix and it gives it plenty of flavor. you just go buy a box of it. it comes with 2 envelopes of it. and the recipe is on the box. we use only half of the recipe as there is only myself, my fiance and our 19months old son. if you have more people than that i would make the whole thing but it calls for like 2 lbs meat and we use one. if you use 2 then you need to mix it up and use 2 different loaf pans otherwise it's too thick in one and won't cook right. so anyways it's like 1lb meat, egg, ketchup, and bread crumbs and the onion mix. i think thats it but like i said the recipe we use is right on the box.
I have one my husband loves. It contains oatmeal and cheese. I also use 1/2 lb ground turkey and 1/2 lb ground pork instead of 1 lb ground beef.
1 egg, 3/4C milk, 1C shredded cheese, 1/2C uncooked oatmeal, 1/2C chopped onions, 1t salt, 1lb ground meat. Mix together and top with a mixture of: 2/3C ketchup, 1/2C brown sugar, 1 1/2t mustard. Bake uncovered for 1 hour at 350.
Many of the Stove Top Stuffing boxes have recipes for meatloaf on them. My hubby (the cook in our family) has been experimenting with them and they have been great! (I don't have very fond memories of meatloaf either but these are great, and our picky 3 y.o. is loving it also!) There are many "flavors" of Stove Top and he's been trying the different ones, and so far none have been a flop for us... (He also doesn't put the ketchup on top when baking. I hated that dry, sticky baked ketchup on the top of meatloaf. We just dip it as desired when we're eating it, but often don't even need it since it actually has flavor.) Another thing we love is to melt shredded cheese on it after we slice it. BBQ sauce is a great sub for ketchup in meatloaf also. Hope that helps a little... green pepers ( if you want also chopped in small decent pieces)
ketchup
1 or 2 eggs
saltine crackers
salt and pepper
I have also had meatloaf with a little bit of bbq sauce in it and that was good
and also with .. um those ranch packs that you would buy to make like a ranch dip or something.. u just dump the packet in the meatloaf before you mix it all together .. that was pretty good..
u could probably also use like the onion packet ones instead of the ranch.. well there are some ideas...experiementing is fun so try new things
350 for oven.
mix egg, italian bread crumbs and a little pizza sauce with your hamburger. Then put it on foil and roll out into a rectangle. Add mozzerella and a little pizze sauce you can add spinach if you like (I did not). Then roll it(like a pumpkin roll). Place it in the oven an hour then add a little sauce and more mozerella on top cook a few minutes longer. and you have pizza meatloaf. it was good. enjoy.
I use the Lipton Onion Soup recipe on the box-it is simple and easy and tasty!! Sometimes I use ground Turkey instead of ground Chuck and that is very good! My neighbor "hides" veggies in her meatloaf so her kids will eat them-maybe you could try putting them in for your husband to give it more flavor!!
MEXICAN MEATLOAF
Don't know if this one is on here or not, but this one, everyone loves, even the baby!
Use ground turkey instead of ground beef.
1lb or more depending on how many.
Instead of using crackers to bind use any of the following:
Dorritos,
green onion,
green pepper,
corn
Combine, and bake at 350 until done.
Instead of using tomato paste/sauce for the top, after the loaf is done cooking, using the following:
Velveeta cheese and salsa. - Combine to make a salsa con queso sauce and pour over the top...serve with tortillas or left over Dorritos. We all love it!
I won't bother typing out the whole recipe, but if you go to the Quaker Oats website they have a very good, simple recipe for meatloaf, I believe it's called "Classic Meatloaf".

I make mine with Stove Top Stuffing! Did this once because we were out of crackers, and we loved it so much it has stuck through out the years. It is my whole families favorite!
1 LB. Ground Turkey or Burger
1 C. Stove Top Stuffing
1 Med Onion chopped
1 Egg
1 C. Milk
Salt and peper to your taste
In bowl combine Stuffing, egg and milk, let soak a few minutes, then add other ingrediants. Put in Pam srayed loaf pan. Spread ketchup on top and bake @350 for about 1 hour! Enjoy!

My little hint is add some cheese into whatever recipe you find and you will be amazed at how fast he'll eat it. Even my 7 year old will eat my meatloaf when I have cheese in it. www.easyrecipes.com has some good ones too.

I found this one on the Kraft site a while ago and we love it. I don't add the cheese on top, as I'm not a real big cheese-on-meatloaf person.

When I make my meatloaf I always mix in terriyaki and A1 sauce along with a pack of onion soup mix. I do not actually have a recipe I just put enough sauce in until the meat changes from red to brown. Depending on which flavor you prefer, you can add in only one of them or both. Mix it all up and pop it in the oven. It gives it excellent flavor and ends up being juicy. My boyfrined too was not a fan of meatloaf but loves mine and so does my 2 year old daughter!
Kraft.com has one it's fast and easy, and is very good! We always make it and then even put bacon over it. Our kids love it and so do we!
