Does anyone have an amazing meatball recipe? I just roll ground beef into balls and sprinkling seasoning salt and garlic salt on them. Yes - boring! I chop up onions and throw them in with the sauce but would like them in my meatballs. Last time I tried egg it was all gooey and stuck to the pan.

1/2 lb Beef, 1/2 lb pork ( I usually triple or quadruple this recipe)
1 egg
1/2 cup stale bread crumbs,, use a grater
1/4 cup Parmesan cheese
Garlic chopped or garlic salt
Black pepper
1/2 tsp Oregano or parsley

Roll them up about the size of a large walnut, place them on parchment paper (or a meat rack) in a baking pan to catch all of the fat, and bake them 12 to 15 minutes.
If you want them crunchy on the outside you can then place them in a skillet for a few minutes.

Once cooked, These can be frozen and used a few at a time.

I add Liptons onion soup mix to my meat ( groud beef & ground turkey ) then brown them on the stove, Move them to a slow cooker and a 12 oz jar of Chili sauce and 1 cup of grape jelly and then simmer 2 hours, These are the best meatballs ever ( I never tell anyone about the grape jelly until after they have tried them ) jsut make sure no one is allergic.

The trick, with any meatball recipe involving egg, is to freeze them before cooking! Make meatballs and arrange on a wax paper lined baking sheet. Freeze, then tranfer to a baggie. Cook as usual and they'll stay intact and won't stick. Plus, you can make a big batch and keep meatballs on hand for later!

Here's what I do for a basic recipes.
Mix together ground beef (leaner the better), ground pork or italian sausage (forget lean), at least one egg, parmesan cheese, a few slice of any old bread soaked in milk with excess milk squeezed out, grated onion, grated garlic (don't like big chunks), dried oregano, red pepper flakes (we like spicy), chopped fresh parsley and basil, and plenty of salt and pepper.

Brown them in a medium high skillet, i use cast iron, no oil needed, until a lovely darn crispy color, plop on a pot of sauce to continue to cook through.

This is how I make my meatballs, no recipe

Use a couple of pounds of meatballs, add 1 egg, and about 10 crushed saltine crackers, and some diced onion. Then I open up the fridge. I put in a little this, a little that. Ketchup, bbq sauce, taco sauce, worchestchire (sp?), and jalapeno juice, add some garlic. I mix well with my hands, that way the egg gets all mixed in really good, and is not gooey. I make the meatballs on a cookie sheet and bake them about 325 until they are firm, then I put them in a strainer to drain the grease. They always taste great.

No recipe, but here is what I use.
Sometimes Lipton onion soup if I have it.

diced onion and celery
1 egg per Lb of meat.
saltine crackers
salt and pepper
worchestire sauce
parsley
maybe oregano

My kid loving meat balls or Meatball surprise

1 lb hamberger
1 egg
2/3 cup instant dry milk
1/4 cup catchup
1/8 cup worcheshire sauce
and garlic salt

smush together
secret ingredient.......1 cup rice krispies!!!!

mix together and:
* fill muffin tins, optional add a chunk of cheddar cheese inside each one and cover up with the hamberger mixture & bake 25 minutes
* fill meatloaf pan and bake 350 for 45 minutes (better to save energy and make single servings)
* roll into little balls and bake 350 for 15 minutes

I do a combination of ground beef, pork and veal (sometimes you can find it at the store as "meatloaf mix"). Mix it with egg and Italian bread crumbs and seasonings, then brown in olive oil. Then I throw them in a slow-cooker with spaghetti sauce for 4 to 5 hours for pasta and meatball dinner.

I tried egg- can't do it either!

What I do is get ground beef, some sun dried tomatoes, black olives, onions and garlic and cut them all up and mix it in with the beef. Add a little flour to make them stick and BAM awesome meatballs =) Quick, easy, and delicious!
