Mamas,
Spring and summer means lots of fresh fruits and vegetables. I am looking for interesting soup recipes, and something I can give to my 19 mos old as well! Can you all please share your favorite recipes? And well, if you make soups for a meal, what else do you serve with them?
DD does badly with fruits (doesn't like smoothies, milk-shakes, juices, and spits out all fruits!) The best I can manage is to mash some bananas or applesauce with her oatmeal for breakfast. But she likes soups (savory taste..). So...I feel foolish asking...can you make nutritious soups with fruits?
PS: We are vegetarians!

So What Happened?

I've never tried Carrot soup before, will do it now!
And am going to bravely try fuity soups.. :)

Carrot soup is really easy and delicious. All you do is saute a chopped onion and some garlic if you want in oil or butter till golden, then add a pound of chopped carrots and some water and broth or veggie stock. I have added cooked apples to sweeten it and have tried a variety of seasonings, my favorite being cumin and salt.

French Onion Soup-
onions, butter (or in your case margarine), beef boullion (or in your case veg). brown onions, add boullion and water, simmer for a few hours.

Green Soup -
Spinach, Kale, Broccoli, boullion, onions scallion, milk or cream (or in your case tofu). Cook slowly, run through the blender before serving.

Potato Leek Soup-
Bacon, Potatoes and Leek. dice to 1/2 inch cubes. Brown in the frying pan, add water, boullion, and cook slowly.

Black Bean Soup -
Black beans, tomato, onions, cilantro, boullion, a bit of corn (if you want), peppers, add water, cook slowly.

Veg Chilli-
Kidney and black beans, corn, tomato, onion, cauliflower, cocoa powder, jalapenos, cilantro, cumin, a bit of honey, add water, cook slowly.

Veg Stew -
Celery, carrots, potatoes, onions, okra, lima beans, boullion, salt pepper water.

You can make most of your veg dishes into a savory soup by cooking as usual, then adding lots of water and simmering.

We eat cheese sandwiches with our soup, a side of pasta, a hearty spinach salad, bread sticks or sometimes more soup with our soup.

Try looking up recipes for mango or watermelon gazpacho -- these are both sweet and savory. Technically bell peppers and tomatoes are fruits, so a more traditional gazpacho, or a red pepper soup would be good, too. The other fruit soups I make are sweeter (I make an easy strawberry soup with frozen strawberries, frozen raspberries, and orange juice and maybe some sugar).

any type of fruit can be made into a soup! Just think of the possibilities! Puree the fruit, add cream/milk/juice/your choice. My niece also adds flaxseed, wheat germ, & other supplements.

have you ever combined peanut butter & banana? Good combo!

pureed fruit is also good as a dip/spread for crackers, tea sandwiches, cookies, other fruits, & even some vegies. We use a pineapple/cream cheese dip for celery & crackers! Good Luck.

I have had some amazing chilled fruit soups! I have a vegetarian cookbook that I know has some...if you're interested send me a message and I'll type out a few...You can also google "savory fruit soup recipes". We do a lot of grilled veggies in the summer. Depending on the soup...sometimes we'll do grilled cheese sandwiches on the side...whole wheat soda crackers...or nothing...just the soup (especially if it is a filling soup with beans).

carrot soup:
Boil 1/2pd carrots in 4 cups veggie broth, 1tsp cinnomon, and 1 tsp chilli pwder.
once the carrots are soft put in food processor with 1/2 cup orange juice and 2 tb sour cream (or 2tb soy yogurt if you are vegan) and blend till smooth.

Mashed potatoes with eggs (if you do eggs/fake eggs) are a good savory breakfast. You can cook the potatoes in Vegitable Broth and use the broth to mash them, and you can add in TONS of great food options to change up the flavor.

oops vegetarian version - omit the chicken and use veggie stock

weeknight chicken tortilla soup

I use a whole rotisserie chicken fromthe grocery store to make this, but you can use leftover chicken and chicken stock.

I take the meat off the bone and set aside. Then boil whats left of the chicken with whole pieces of celery and carrots until it comletely falls apart. Strain over another pot to catch all the chicken stock you just made.

Then add

1 bag frozen black beans
1 bag frozen corn
2 cans rotel
1 small can tomatoe paste
reserved, cut up chicken.
Cook until beans are tender. Top each bowl with shredded cheese and tortilla chips. Some top with sour cream and pico.

Chicken Noodle Soup
Same method with rotisserie chicken
add sliced carrots and celery, raw medium egg noodles and reserved chicken. Cook until noodles are tender. Saeason of course the way you like.
