Making Cupcakes Ahead, When Do Frosting?

Question, I know I can make cupcakes ahead of time, but should I wait till the morning of to do the buttercream frosting?

Here's the issue: I don't really want to wait till the morning of because at 8:15 a friend is dropping of two kids, so I'd have 4 under 4, and then everyone is showing up for the party at 9:30 (and yes,my friend has to drop off her kids, she broke her foot and is seeing the Dr.)

Will they stand up if I frost the day ahead, or should I just find the time that morning? (I could maybe have another friend come early so I could do it without my 15 month old at my feet).,

I work in a bakery and you can absolutely make them the day before and put them in the fridge but I suggest the freezer even, it will ensure your frosting stays on the cupcake as you placed it (no dripping or sliding off) and cupcakes only take an hour, 2 hours tops to defrost....so you can make them the day/night before then take them out of the freezer the morning of, when you wake up and they will be perfect!

~This is what our decorator does when she has orders that need to be picked up on her day off. Just FYI, you can buy a container with a lid if you need to from your local grocery store bakery for like $2, people do it all the time at our store...not everyone has a container to fit 20+ cupcakes with a seal-able lid, just go in and tell them how many cupcakes you will need it to fit :)

Do it the day ahead and stick them in the fridge...thats what I do. =)

Next time you can make this frosting and it will freeze nicely with your cake/cupcakes etc

1 tub cool whip (not the huge one the normal size one) and 1 8oz pkg of cream cheese, 1tsp (fresh is best) lemon juice, 1-2 cups powdered sugar

get the cool whip and the cream cheese mixing together (hand or stand up mixer) add the lemon juice then slowly add the powdered sugar. This is an ingredient that is "to taste" I like to use less than many but some like really sweet frosting ... it freezes VERY well and is quite yummy. I have not tried it but I think you can swap the lemon juice for vanilla, almond, orange, lime etc whatever you like I typically use this for red velvet (the lemon is a nice twist), carrot and white cakes.

I have a no refrigeration required bakery icing recipe if you are interested -- then you can frost them the night before and let them out :) I do that all the time. PM me for the recipe if interested. We can't use butter or cream for my daughter b/c she is milk allergic- but this has all normal ingredients -- shortening, confectioners sugar, vanilla, water, nondairy creamer.
