My Fiancé and I are in desperate need of good knives for cutting and slicing ECT.
Our nives are dull and are not very good. We looked at some individual knives yesterday at Bed bath and beyond but wasn't sure about the cauphloun brand.
We would love to know what your favorite brand of knives are and some reccomendations. Also if you've had a bad experience with a certain brand we'd love to hear about that.
These knives will mainly be for meat fish and veggies :)

I have a set of J.A. Henkels that we got as a wedding gift over 12 years ago & they're still absolutely fantastic to this day. They're pricey, but well worth it.
There are a ton of great sets out there.
Cutco - they are VERY expensive - but offer a lifetime warranty
Chicago Brand - they were very good at one point - I gave them to my ex in the divorce and bought Cutco!!
Pampered Chef has a butcher block of knives as well - they are reasonably priced for knives.
Wustof is good too. I think Williams Sonoma sells them.
You need a knife that is balanced and feels good in your hand...i know this sounds weird, but it's VERY true - handle the knife. If it feels comfy in your hand you are less likely to drop it and cut yourself or someone else.
DO NOT BUY CHEAP!!! I can tell you that - buy what you can afford - but do NOT buy cheap!!! Since you are getting married - put them on your registry....great way to get great knives!!!

My MIL only buys the 'best of the best', she has great taste and the $ to boot...and this is what she has and what she bought us.
~If your gonna invest in some good quality knives, you do need to keep up on the sharpening though too!
We have Calphalons, and they're really nice. I think they were about $150 for a set with 4 knives, a fork, and a sharpener.
Whustoff's are also terrific!
Wustof and Henkles (sic), $$$$ but worth it!
Henckles, Wusthof, or Global would all be good choices.
I have Wusthof. Splurged on just one chef's knife a few years ago, and now I've gotten a few more. SO worth the money. And the place where I bought them sharpens for free.

I have some knives that I ordered through Pampered Chef and I LOVE them! They have three sizes and they all slide into their own sharpener for storage then when you take them out, every few times you press the lever on it while pulling it out and it sharpens it! Totally cool! (They also have these little tiny knives that are super sharp and I use for anything and they're ony a dollar each.)
Henkel...they are worth it! My mom gave me a set for Christmas two years ago, after I went through two cheap sets in two years. They are around $200 for the set I think.....Kohl's carries them, so if you shop there you can get a deal when they have kitchen sales. My stepsister also has a set that she got for a wedding gift......9 years ago! Chicago Cutlery are also very good and what my sister has and what my mom had when I was growing up.

A reminder, when you do purchase your new set of knives. Be VERY careful. They will be super sharp and after using older duller knives you can really injure yourself with super sharp knives.

I absolutely love my Pampered Chef Knives. They were kinda pricey, but well worth the money. I love to cook and use mine several times a day. I didn't buy the knife sharpener that goes along with it because it was also really expensive, but I did buy a Caphalon knife sharpner and it works just fine.
I'm partial to Pampered Chef's Forged Cutlery knives (I'm a consultant). I use them every day. They sharpen beautifully and I had a professional knife sharpening guy tell me they were among the highest quality knives he had ever seen. That said, I've owned Henkels which I liked and even a Wustof (sp). both on the same level as PC's knives in my opinion. Having said that, I know many people like the Cutco knives and they ARE good, however, for several thousand dollars, a knife is going to have to actually COOK dinner for me to justify spending that much. Other knives come with a lifetime replacement guarantee and they don't cost that much.
My suggestion is to see what feels good in your hand and decide what individual knives you'll use. You don't need an ENTIRE set. You need a good size slicing/dicing knife (I like a Santoku or Chef knife), a bread knife (serated), a paring knife (some people don't know what to do with this kind of knife, don't know why), and maybe a boning and/or utility knife. Really, I could live with a Santoku, bread & paring knife and be fine for everyday cooking. Let me know if you need further help.
I have Shun knives and LOVE them! I used to have Henckels and they were nice, but when I used the Shun's I was blown away. I actually gave my entire Henckels set away. They are pricey, but you get what you pay for and then some!
I didn't read the responses but I bet a few reccommend Cutco. I used to sell these knifes and have a few. THE BEST BY FAR! I love them and would highly reccomend them.
I bought my Cutco knives almost 30 years ago and still love them. They are very expensive but they will and do last! I've added to my 'set' a little at a time over the years as well.
Now having said that, my favorite paring knife is a Henckle.
I have the highest end version of Henkels and LOVE them. We paid about $600+ for them but they are 16 yrs old and fantastic. IF something happens to one of the knives, Henckels replaces it free.
Well worth the money! You get what you pay for!

We received a set of Cutco knives as a wedding present almost 17 years ago. They are fantastic. I broke off the tip of the paring knife once (totally my fault) and they replaced the entire knife for free. And every once in a while, I get my local Cutco rep to come to my house and sharpen all the knives, again totally free. And they cut like a dream. I've heard of people leaving their Cutco knives to their kids in their will, that's how long they'll last. But, to tell the truth, they are EXTREMELY expensive and if we hadn't gotten them as a gift (our friend was a rep at the time and got them for us), we probably couldn't even afford them...
