Looking for Low Fat Easy Recipes

i find that i am dont have a lot of time to think about meal preparation though i do like to cook.... and lately i just keep doing the same things over and over. i still need to lose those last pregnancy pounds and the easy things to cook like spaghetti or burgers etc... arent the most healthy. so if anyone has some great quick and easy recipes for a mom with not a lot of time in the kitchen, or some great cassaroles that i could freeze that are low on the fat content - i would really appreciate it!

not so much a recipe but time saver if you cook up chicken ahead of time then refrigerate it you can pull that out any time you need to then buy pre-washed bagged lettuce and a few veggies and you can make salads for the whole fam in minutes. also if you just want to cook up some chicken w/o adding fat you can poach it what I do is I put the breasts in a pan add water to about half way then cover after the water starts boiling I reduce the heat to medium and let cook or about 12 min. also I add seasoning to the water to give a little extra flavor and it really is good and lowfat and add side dish of choice.

not really a recipe but it works, when I need a meal and didnt prepare for one or dont have time or kids are fussy....I just take frozen chicken breasts and put them in a pan with frozen brocoli floretts (costcos are nice and big), sprinkle with seasoning like mr dash or just garlic and pepper and maybe a bit of chicken broth and bake at 420 for 30-45 minutes. Its quick, good, and healthy. (my children and I are milk intolorant so our choices are limited) the brocoli gets a bit brown on the tip and has a nice crunch.
also, chicken in breadcrumbs or cracker crumbs with seasonings and frying it in a bit of olive oil is good. I have found you really cant screw it up to be inedible and I enjoy trying things out. The easier the better.

BAKED CHICKEN PARMESAN
Serves 6

Vegetable oil spray
6 boneless chicken breast fillets (approximately 4 ounces each), skinned, all visible fat removed
Bread Crumbs
3/4 teaspoon garlic powder
1 1/2 teaspoons paprika
6 tablespoons grated Parmesan cheese
1 1/2 tablespoons finely chopped parsley
1/2 teaspoon thyme
1/2 cup low-fat buttermilk
2 tablespoons acceptable margarine, melted

Preheat oven to 450F. Lightly spray with vegetable oil spray a rectangular baking pan.

Rinse chicken and pat dry. Set aside. Place bread in blender or the work bowl of a food processor. Process into fine crumbs.

Pour crumbs into a shallow bowl. Add garlic powder, paprika, cheese, parsley and thyme. Stir to mix well.

Pour buttermilk into a shallow bowl.

Dip fillets into buttermilk, shake off excess and then dip into crumbs.

Drizzle each with a teaspoon melted margarine.

Bake 15 minutes; turn fillets over and bake 10 minutes more.

I usually make 2 and store one in the freezer. I also use the foil disposable pans for easy clean up =)This goes well with basmati brown rice and steamed green beans. =)
I invested in a rice cooker/veggie steamer recently. Veggies are a low calorie way to fill you up. I am so glad I bought it!! I use it all the time!!

I love getting recipes from the Weight Watchers website. They have one free recipe there everyday. You can even sign up to get them e-mailed to you.

I also love the Kraft Foods (Free) magazine. You can sign up for it on the Kraft website. They come out every few months. Lots of easy ones in there!

This is really good...it's a chicken taco bake. You take the pillsbury low fat crescejt rolls flatten them out on a cookie sheet (rub the seams together to seal). Then make ground chicken like you would for taco's layer whatever you like on the crescent rolls. My family likes low fat refried beans, olives lettuce cheese and sour cream aongwith the chicken of course. Once you've got everything you like piled on the rolls put it in the oven (temp is on the crescent rolls package.) and bake until the rolls are golden brown. Very good and very easy and takes no time to make.

You sound just like me! If you want some good low fat recipes, go to the local Weight Watchers and buy some of their cookbooks. All of the recipes are member-tested, and many are lower fat alternatives to existing recipes. They also might help you lose the baby fat (I've lost almost 40 lbs.!), and would certainly add variety to what you eat. Most aren't too complicated, too.

If you get other cookbooks, look for ones with "simple" and "low fat" in the description...try looking online at Amazon, using "easy" and other like words to find the cookbooks that look the most promising. Good luck!

Hi R., I'm B. Rae. 33 with three boys 10,8,2 years old. It's hard to not only make enough food but I'm kind of a hippy at heart and want to instill the same "granola" diet that is good for you. It's impossible for me to have this without a plan. I got a dweebie calander that is silly (def not a crazy cat lady one lol) and plan out my menu for the whole month before the first. Ihave even budgeted how to buy all the frozable non perishables around the first as well. I hardly ever have to go to the store I simply make a check list like hamburger for 7 nights and chicken for 4 nights and so on. I have had a great time getting creative looking for stir fry and other recipes. But if you like to cook do what I do make it up, just a head of time. So far enchilada is my most popular around here. I put the light sour cream in it before I stuff em with fresh cilantro and green onions oh boy. I love it. Good luck and God bless
