I am trying to look for healthy recipes to make ahead and freeze. I hate having no clue what to make and I hate going the fast food route. My husband is working nights so I would like to know that I have dinner for him the following night.

Once a month cookbook has many good freezer recipes. I don't know if some of the recipes are especially healthy, though we think many are tasty, and we always add salad and fresh veggies where we can.
All great suggestions you have! I am a client of Dream Dinners. I really love going. The cost is a bit more than going to the grocery store, but I always have good healthy meals. I make all my meals for the month in 1.5 hours. I always select the meals that are marinated meats etc... Everything is fresh and I know whats in them. I don't work for a Dream Dinners or trying to get your business (since I'm in Austin anyway), but it has been a true blessing to me. Kinda like a Mommy Spa for cooking. They have all the oils, sauces etc, you need and they clean up after you!! The only thing I have to remember is to take the meals out the night before. I've also had meals at a moment's notice to bring to people who have fallen on hard times (hospital stays etc...). You can go to dreamdinners.com to see if there is one in your area to just try out. I've been really blessed by them!
I love the website-www.allrecipes.com. It is my go-to source for easy recipes. Most are from normal folk and some are from companies. Usually get many recipes for the same item. I can search a recipe then read through them to match my on-hand ingredients and which one sounds the best, easiest. Lots of reviews and helpful hints from cooks that have tried the recipe before.
Some ideas of items are spaghetti sauce, chili, meatloaf, roasts, baked chicken, lasagna. I buy larger amounts of ground meat and fry it up and freeze in 1 lb. bags so they are ready to add to jar sauces, soups, for taco, etc. Marinate chicken pieces/breasts in freezer bags into recipe/meal sizes and freeze. They marinate as they freeze. Then I just thaw and cook in a skillet. Brown on both sides a few minutes and then add water and cover. Cook until they are done. I try to boil the water out at the end so the marinate makes a glaze. Or pop in a crock pot in the am and it is done by dinner. I have never had a problem letting the meat thaw/cook in the crock pot but it is up to your tolerances on the subject. If you thaw first, then you may need to cook on high to get them done by dinner or cook them in the oven covered.
Hope that helps and gives you some inspiration.
Take care,
D.
Mom, I post recipes that are easy and tasty along with what is on sale at HEB. I hope this helps.
Homemade Gourmet is what you need! We have a 4 Meals in 4 Minutes program designed exactly for your reason! I do freezer parties at my house once a month demonstrating this where people take home 5-7 meals for their freezer at an average cost of $2.25 a serving for the whole meal (it feeds 4-6 adults, so yours would be even cheaper!) As an elementary teacher and a mother of 2, it has really saved my sanity knowing ahead of time what was for dinner! Let me know if you have any questions!
