Hi. I am having some people over for drinks and "finger foods". I am looking for ideas for some healthy, but interesting things to serve. I am tired of chips and dip. Does anyone have any ideas?

What can I do next?

My favorite has always been cucumber sandwhiches. Just slices of cucumber sprinkled with dill and little slices of rye bread. I'm not sure of the spread that's on the bread but if you do a search on www.foodnetwork.com, I'm sure there's a recipe for it.

I'm always a fan a veggie pizza. You just get a reduced fat crescent roll package, spread it in a pan and bake until golden. (make sure to pinch all of the corners and sides together) Let it cool, and spread on any low-fat soft cheese or flavored cream cheese. I like low-fat garlic herb cheese that comes in a tub! Then just cover with chopped up veggies of your choice, I use carrots, peppers, broccoli and reduced fat shredded cheddar cheese. Cut in to squares and serve. Your guests will love this simple, light, and yummy treat!

For a sweet touch, I love to do dark chocolate fondue. Kind of naughty, but when you throw in a bunch of fruit to dip, the amount of chocolate you eat is very minimal.

Hope this helps and have a great party!

My sister-in-law just made goat cheese crostini's. very yummy and easy. Just cut a french bread baggett about a half inch thick and toast them in the oven (I'm sure you can find something pre-made in the grocery store if you are short on time). Once they are cool, spread goat cheese on top (make it thin), then pesto (store bought) and then (jarred) roasted red peppers that you cut up or sun dried tomatoes. Or top the crostini (or bruscetta what ever you want to call it)with tomatoes, onions and basil - which I believe you can buy in a jar in the italian aisle.

Try this Veggie Pizza recipe. It is easy to make.

2 pkg of Crescent Rolls
8 oz cream cheese
1/2 c mayonainse
packet of dry ranch dressing
broccoli, cauliflower, shredded carrots

Unroll the crescent rolls and lay them flat on a rectangular cookie sheet, bake as directed.
Soften the cream cheese, mix in the mayo and dry ranch. Once the crescent crust has cooled spread the cream cheese mixture on and then add the veggies. Let it set in the refridgerator for an hour. You can use all low fat ingredients, it tastes the same. You can try other veggies also. Those are just the ones I usually use. My neighbors request this whenever we get together.

I like the veggie pizza idea. You can make it an Italin theme and serve assortments of cheese and crackers - or a wine cheese ball , cut up salami, Dipping oil w/ sourdough bread(I am a big fan of William Sonomas dip oils) Get a package of meatballs and throw in some marinara sauce, buy or make a cold antipasta salad. Good luck and have fun !
