Looking for Cheap, Easy Things to Make My 3 Year Old (And Me) for Lunch

We are sort of burned out on what I usually make. Typically she has either a string cheese with a hot dog and a yogurt, or mac and cheese, or pbj or grilled cheese. Any other suggestions? She's sort of (but not severely) picky. She hates meat (except hot dogs) and loves fruit and cheese and yogurt kind of stuff and she likes carrots and corn but that's about it for veggies.

mini pizzas
spaghetti- o's?
add granola to your yogurt & fruit.

I have been making quick tacos for lunch this past week. Tortilla, refried beans, sour cream, cheese, and olives. My little one (18 mo) just takes bites off of mine (for some reason she doesn't like it when I give her, her own). Why don't you try giving her fruit salad with granola, and if she doesn't like that try ambrosia fruit salad. I get bored with everyday stuff too. Good Luck!

My kids like left overs from dinner, chicken salad sandwiches, tuna sandwiches, ham and cheese sandwiches, salads, peanut butter on triscuits, soup, spaghetti, fried rice, and more. A friend of mine sends chicken nuggets or fish sticks sometimes... They all like cold pizza...

get flour tortillas... on a skillet, warm it up and put shredded cheese on it until it sort of melts.
Then either roll it up or fold it.
My kids LOVE that.
(Oh, it also tastes great with a little bottled BBQ sauce drizzled on it).
For myself, I just add more stuff to it, for 'my' lunch or add pre-made roasted chicken in it. My kids just like it with cheese.

Or soup.

Or scrambled eggs with cheese on it. "Breakfast" can be served any time.
In our house at least. LOL
And eggs are a non-meat source of protein.

Or, bake a potato in the oven or microwave... .and scoop out some of the potato after it is cooked, and stuff it with stuff... cheese, bacon, whatever she likes.

Put melted cheese on anything she likes... its a 'protein' and good for dairy intake as well.

Your'e lucky she likes carrots and corn. Both good and sources of fiber.
You can put melted cheese on those too...

cream cheese on celery sticks with a few raisins on top (I think they use to call them ants on a log).
fish sticks
tuna fish salad (tuna, mayo, maybe a hint of brown sugar and a little pickle relish)
pasta salad
salad (there are so many kinds)

I have a very picky eater as well. We've had surprising luck with tuna fish and Cheez-its. I give her a bowl of each- she loves dipping the crackers in the tuna, there's something about dipping that kids like.

I also give her scrambled eggs mixed into cheese grits. They make an instant one that is pretty tasty (if you like grits) and the scrambled eggs break up the texture and add protein. It's very easy, very cheap, and surprisingly nutritious.

I buy Costco or Fresh and Easy cheese pizza, then add thin slices of onion, green pepper, mushrooms, broccoli and roma tomatoes. I use the roma tomatoes because they are not as juicy and don't make the crust soggy. Just add the ingredients you like to your part of the pizza.
