Looking for a Salad Recipe to Go W/ Lasanga!...

Going to a family event and the main dish is Lasanga! Somebody is already bringing a Caesar Salad, I was told to bring a salad anyone have some good recipes.

What can I do next?

how about a greek salad? easy to make and goes great with italian food...I second kraft foods.com for recipes...also crisco.com has good recipes

I love Jamie's Cranberry Spinach Salad and the Strawberry Spinach Salad (I have subbed apples or rasperries for the strawberries with great results)

A broccoli salad would be great, too!

Greek Salad Recipe

1 bag of Romaine Lettuce (three stalks in one bag)
1 English cucumber - long and skinny (wrapped in plastic)
1 container or bag of cherry tomatoes
1 4 oz can of sliced black olives
1 container of feta cheese
1 dry packet of Good Seasons Italian Salad Dressing
1 jar or package of pine nuts
1 avocado (optional) *very good if you like avocado
4 green onion (optional) *very good if you like green onion

Balsamic Vinaigrette
Extra Virgin Olive Oil
Salt and pepper to taste

This recipe can make as little or as much as you want. If you use all three stalks of lettuce, then use the whole thing of all of the other ingredients. I usually half the recipe and that is enough for 4 good size bowls of salad.

Mix together the Good Season Italian Salad Dressing using the instructions by adding Balsamic Vinaigrette, Extra Virgin Olive Oil, water and dry mix. Shake or mix together and set aside.

In small fry pan - sauté pine nuts in a little bit of olive oil. Cook on LOW heat and continue to stir frequently - MAKE SURE TO WATCH CAREFULLY because it is easy to burn them. When all pine nuts are darker brown then place on paper towel and let cool before putting on salad.

In large bowl layer ingredients - cut lettuce, cucumber, tomatoes, add a little salt and pepper to taste and then add black olives, feta cheese and when the pine nuts are cooled place on top of salad.

You can choose to put the dressing on the whole salad and toss together or you can toss together all ingredients and then put the dressing on each individual salad. Sometimes it's easier to put a little bit of dressing on the whole salad
and serve some on the side if people want to add more.
