Do any of you make a good chicken salad? I love chicken salad this time of year and make my own. I'm kind of burned out on my recipe and would like others opinions and how you make it. Thanks!!

I add just enough mayo to make it moist. Then I add chopped walnuts and either dried cranberries or fresh grapes.

This is one of my fav things to make for lunch. The nice thing, for me, is that I can use damn near whatever I happen to have laying around. I think of it more like making soup (use what you got). Ideally, I will roast a chicken the night before and use the "leftover" meat off the bone, chopped for the salad. Then I often use the bones to make stock. For the salad its olive oil mayo (or light), garlic powder, lawry's season salt, pepper, small bits of apples (gives it a nice sweet crunch), chopped onion, celery, relish (jar or chop of pickles yourself), cranberries, chopped carrots. The only "rule" for me is the seasonings and at least ONE crunchy item (like I may use celery or onion or carrot). The apples makes is extra good because it adds a sweet and a crunch. You could even use like the crunchy part of bok choy or something....so versatile. Also if you leave it overnight very often the flavor is better the next day.. OH! and almost forgot I use crystal hot sauce (vinegar base hot sauce) when I eat it on crackers. Delish!

We always use grilled chicken. I dice it up. Mix in mayo, italian dressing, oregano and chopped onion and celery. It is soooo good! I made it for a shower before and everyone was asking for the recipe. I just do everything to taste. Lighter on the mayo than you may normally do because of the dressing. I'm 5 months pregnant and now desperately want to make this after typing it! Yum!

Leftover rotisserie chicken, grapes, apples, pecans, mayo and tarragon. Add a splash of red wine vinegar, salt & peper to taste.

This summer I might try adding blue cheese crumbles.

I like it with roasted chicken and mayo, mixed in with some kind of fruit (either chopped apples or grapes), and nuts (either walnuts or cashews). I've also done it with dried cherries.

I love roasted chicken (or grilled)
diced green pepper
hellman's light mayo
pepper
salt
dash of cumin
dash of garlic powder
dash of onion powder (you could dice onions, but as a family, we don't like raw onion so I substitute the powder)

I discovered the secret is roasted chicken not poached or boiled.
Celery, onion, parsley, celery salt, pepper and just enough real mayo to hold it together

finely chopped cerely, grape slices, walnuts or sliced almonds, finely chopped purple onion if you like, mayo, salt & pepper...i boil a whole chicken and use that.

Mine is kinda different, but it gets great attention at all the gatherings I take it to:
I use canned chicken for time, but use what you like
light ranch dressing
celery
red bell pepper
purple onion
pickles
garlic salt
