Savannah Cheesecake Cookies by Paula Deen on the Food Network. Easiest dessert ever, and they're fantastic, light, and cute! You can change up the topping too, depending on your taste :)

You could also make an eclair cake. All you do is make up instant vanilla pudding (for a crowd that big, I would make two pans full, probaby 4 small boxes pudding). Fold Cool Whip into the pudding, then layer graham crackers in the bottom of the pan, pudding mixture, repeat the layers and top with graham crackers. Heat a container of chocolate frosting and frost the top. You can google this recipe easily. Chocolate Eclair cake.

this serves 4 so multiply it! I ran with this b/c no baking and 3-5 hrs in fridge and it's ready
3oz dark chocolate, melted
1oz shot of espresso (room temp)
2lg eggs separated
1 teaspn sugar
use wisk to combine the choc and espresso
use a wisk or mixer, wisk the egg whites gradually adding sugar until stiff peaks form
beat the egg yolks into the choc mix. take 1/3 of the egg whites and gently fold that into the choc mix. then add all together gently, divide into serving rammakins or espresso cups and enjoy
You can use clear plastic cups for that many people and add some heavy whipping cream with powdered sugar, have a rasberry reduction sauce to top as well if you like ... this is open for a lot of adds if you like.

You could do a chocolate mousse by making up a package of chocolate pudding, and folding in half or all of a tub of cool whip. Serve it in cups/small bowls, and put a little bit of whipped cream on top, maybe sprinkled with some mini chocolate chips.
Or, make it into a layered pie with similar ingredients as above but in a graham or choc. cookie crust:
