I have leftover ham...I'm usually really good about finding things to do with it...however...I am looking for NEW things...

I have:
* cubed it up and put in mac & cheese...
* made sandwiches.
* made bean soup (what a pain)
* made omelets (so as my son!! YAHOO!!)
* used the larger slices as breakfast meat/steak
* made it into ham a la king (instead of chicken or turkey - over bisquits in a white sauce)
and so much more over the years....

anything new to add???

Missy! We love spinach here!! I wonder, would ricotta cheese work differently than cottage cheese???

Robin - Love Croque Monsieur! I typically put asparagus spears and pineapple over it...thanks!!!

I make a casserole with cubed ham, shell noodles, broccoli and cream of broccoli soup, topped with cheddar cheese. Also split pea soup.

You did say you made omelets...what about just scrambled eggs with all sorts of yummy goodness in it...ham, cheese, mushrooms, onions, tomatoes, spinach...Mmmmm!

And plain old grilled cheese and Ham w/soup!

I just made a potato, onion, ham, cheddar casserole the other night that was a hit.

I didn't use mashed potatoes - I used diced up red skin potatos (left the skin on) that I microwaved till soft.

I've also made up a white sauce (or use a sausage biscuit gravy mix) and pour it over peas and baby onions - add in left over ham and it's a great meal.

I like to freeze slices for future breakfasts.

You can also make ham, green bean and potato casserole.
It's good. You should try it sometime.

Bean soup was a pain? How? It's so easy! Soak overnight, rinse, put into a crockpot with water, a little salt and pepper, and leave to cook all day. Enjoy with cornbread.

Potato soup with ham.

Stuff it into crescent rolls with some cheese and bake.

Cubed on salad.

ETA: You don't have to watch it soak. ;-) LOL! Go to sleep! *Grin!*

My favorite is my Mom's Ham and Spinach "Thing"-she's not very creative with names.

Chopped spinach (can use frozen and drained or fresh) mixed with cottage cheese for some body and spread into the bottom of a baking dish.
Leftover ham (sliced, cubed, whatever) layered on top.
White cream sauce with a little white pepper and mustard powder in it poured over the top of the ham.
A good layer of cheddar cheese on top of the sauce.
Top it all with breadcrumbs and bake until cheese is all melted.

Solo yummy!

Stir fry vegetables. I like broccoli, zucchini, carrots in this dish. You can use a bag of frozen mixed vegies. Add Italian dressing. Toss in sliced strips of ham. Top with parmesan. Serve over pasta.

ham and cheese bow ties.

Original recipe makes 6 servings
8 ounces farfalle (bow tie) pasta
1/4 cup butter
1 clove garlic, minced
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 cups milk
1/2 teaspoon prepared mustard
2 1/2 cups shredded Colby cheese
4 ounces cooked ham, julienned
1/4 cup grated Parmesan cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large saucepan over medium heat, melt butter. Saute garlic 30 seconds. Whisk in flour, salt and pepper. Cook and stir until smooth. Pour in milk, a little at a time, stirring constantly. Bring to a boil for 1 minute. Stir in mustard and Colby. Continue to cook, stirring occasionally, until cheese is melted. Remove from heat and stir in pasta and ham.
Pour into a 2 quart baking dish. Sprinkle with Parmesan.
Bake 20 to 25 minutes, until bubbly and golden.

Most recipes for tuna or turkey casserole can be adapted for ham, but just don't add any salt and consider changing up the seasonings.

Frittata or quiche. Great ways to use up other leftovers such as vegetables, cheese, etc.

Make oven-roasted potatoes, add the ham for the last 5-10 minutes. You can add broccoli and/or cauliflower for for the last 10-15 minutes, for a one dish meal.

Do a potato soup and add the ham to it! You can do a potato au gratin and add the ham. I like making a hash with the ham in it. (I like potatoes and ham, can you tell?!)

You commented about the pain of soaking the beans overnight for bean soup...

You can usually do a "quick soak" where you cover the beans with 2" of water, bring that to a boil, boil for maybe 2 minutes? You then take it off the heat, cover, and let them soak for an hour. Then drain the water and cook as usual... that takes care of the overnight soak.

You still have to cook the beans for an hour or so to make them tender, though.

I also use leftover ham in a jambalaya... there are lots of recipes, or you can use the boxes of rice or rice and beans that you can get at the store, like the Zatarain's, or similar brands... or here's a quick ham jambalaya recipe...

There are dozens of similar recipes.... put in what you like, or take out things if you don't like them.

You can mix it with grated hash browns along with cheese, egg and broccoli. Bake it in a mini muffin tin. They freeze great and rock kids lunch boxes!

oooo, ham soup is the best! canned beans, well-rinsed, cut the time to a fraction.
i often use leftover ham to pump up winter squash soup.
scramble it in eggs.
fry potatoes and onions and peppers and toss in the ham.
grilled ham, cheese and tomato sammiches in the foreman! mmmmm.
now i'm ham hungry!

You could do a Fried Rice version and add small bits of diced ham
I'd even do a ham Taco :) weird, but hey.. if good.. then it works..
