Aloha Ladies,

I'm looking for a spread recipe that kids enjoy in sandwiches.....something that is vegetarian and is great with nothing else added. My kids like their things simple. They don't even like peanut butter & jelly in the same sandwich. It's got to be either just peanut butter or just jelly. I was thinking maybe a yummy & healthy dip would work to vary a little more what we pack in their lunch boxes. (right now, it peanut butter sandwich or jelly sandwich or tofurkey sandwich) Thanks for sharing any recipes that work with your kids.

What can I do next?

You could try a different type of "butter". The health food store sells almond butter and it is very tasty. Does it have to be a sandwich? I sometimes make healthy "lunchables" for my daughter with whole grain crackers, cheese, and finger fruits like strawberries and blueberries. My daughter's preschool will warm up foods at lunch so sometimes I pack her some pasta or leftovers from dinner.

What about humus? Plain flavor, red pepper, eggplant, there are many different flavors and it makes a great dip or spread.

As a young one, I used to love it when my mom would give me a cheese and tomato sandwich. Adding avacado is also yummy. The tomato makes it moist, and the cheese, well, you can imagine the variety available now instead of american back then! But what a treat ! Have fun !!

I second the vote on humus. I've used it instead of mayo or mustard for awhile. Haven't tried it on it's own, but it is yummy, healthy, and comes in lots of flavors for variety.

hmm have you tried cream cheese (theres a few different flavors like onion and strawberry) you can use it for a dip or spread. or maybe add some banana to the peanut butter sandwhiches. my mom would pack us a little container of peanut butter to dip our apples, celery and carrots in. theres so many choices out there to use.
