In Need of Easy Lunch Ideas

I'm looking for some quick and easy (and preferably healthy) meal ideas. I have a 16 month old son and I feel like I'm always giving him the same thing over and over for lunch. I'm a stay at home mom, so I do have time to make him lunch, but I also have a 3 month old which means that I can't spend too much time cooking. My 16 month old is not a picky eater, he'll eat just about anything so I would welcome any and all ideas out there. Thanks for the help moms!

I worked in a preschool with 2-3 year olds and one of the most fun lunches I saw was PB&J Sushi. You take a piece of bread, flatten it out so its thin and spread PB&J on it lightly. Then roll up and cut into pieces. You have PB&J Sushi and kids love it :)

Zarah is Absolutely right! I too get the kraftfoods magazine and they have some wonderful snack, meal and lunch ideas for kids! If you go to their website www.kraftfoods.com you can sign up for their magazine and emails. As Zarah mentioned before, the magazine if FREE!!

TOFU!!!!! Personally you can't pay me enough to touch the stuff, but my kids loved it. I would buy teh "firm" type, then I would cut it into bite size cubes. take frozen berries and put them and teh tofu with a dab of vanilla extract in a frying pan and coook it all up. the tofu takes on teh berry flavor and the berries are just good eats. easy adn super healthy.

This is a great finger food, but beware if you want them to stay relativly clean only serve the tofu no berries, other wise you will end up with a happy berry monster!!!!

Other variations Ihave tried were tofu with butter and cinamon and light sugar... (more a treat, that way)

tofu cooked with light honey and served with banana slices,

allway start with cubes, and pan fry anf thenyou can add just about anyting you want!!!!!

I have a 10 and a 2 yr old. When I was pregnant with my second daughter, my mom bought me a cookbook that I absolutely love! My kids are very picky eaters, and they love just about every meal I have made from this book. Check out "First Meals" by Annabel Karmel. They have great easy recipes for young ones... 3-6 months .. to the big kids.

Hi K.,
There are lots of ways of making lunch for your little guy by visiting kraftfoods.com. I know because I receive their free magazine every quarter and they have so many great ideas for feeding kids.

For example, make some mac & cheese and cut up pieces of a hotdog to make a small meal. Another one is making pb and jelly sandwiches and cutting out shapes using a cookie cutter to make it fun and serve with milk. You can also make a grilled cheese sandwich and cut it vertically into sections and have ketchup as dipping sauce and serve with slices of apple and cut up grapes.
