Hi All!
Well, my dad used to make the most amazing Oatmeal Raisin Cookies! He never wrote the recipe down and he has passed away. They were slightly crisp on the outside and chewy chewy on the inside. Both my husband and I have tried to recreate it, but no luck. I have also tried to follow the Quaker Oats Vanishing Oatmeal Cookie recipe and it just is not the same. Does anyone have a FABULOUS Oatmeal Cookie recipe they can share? My husband and I are taking these cookies (plus several others) to the Union Gospel Mission when we help serve lunch on Good Friday. Please let me know how many cookies the recipe makes, as I have volunteered to make 6 dozen. More is absolutely OK!

Hi P., here is my recipe for Oatmeal Raisin, which my husband and kids always nag for. If I don't make them, they pout!!
2-1/4 cups Flour
1/2 tsp baking soda
1/4 tsp salt
1 cup quick oats (not instant)
1 cup dark brown sugar, packed
1/2 cup white sugar
1 cup salted butter, softened
2 Tbl honey
2 tsp pure vanilla extract
2 large eggs
1-1/2 cups raisins
preheat oven to 300 degrees
in a bowl combine flour, soda, salt, and oats, mix well.
In a large bowl, blend sugars at medium speed, add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla, and eggs. Mix until light and fluffy. DON'T FORGET THAT STEP, IT IS IMPORTANT!!!!
Add the flour mixture, raisins, and 1/2 c walnuts if desired. Do not overmix.
Drop by rounded tsp onto ungreased cookie sheets. Bake for 22-24 mins. Makes about 3 dozen.
P., usually I cook them on parchment paper, but last time, I had a crummy pan that stuff sometimes sticks to, so I used Spray Pam. It really made them crispy on the bottom, I have never used it for cookies before and everyone liked them.
I really hope you like this recipe, the butter and honey really add a great flavor to them, and I love making them and taking them places, people always want to know who made the cookies. Good luck!!
P., Here is my favorite recipe. I tweaked the recipe from they original as I was in a hurry and misread the original. I wrote down my adjustments and that is how I make them now. They are so good. Enjoy!
Oatmeal Raisin Cookies
Cook 2 cups raisins in 2/3 cup water. Pour off and save the juice for later.
1 c. sugar
1 tsp. vanilla
1 c., brown sugar
1 c. butter
2 eggs
1 tsp. cinnamon
3 c. flour, (plus 2 or 3 Tbsp. may be needed up to ½ c.)
3 c. oatmeal (sometimes more)
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda, dissolve in all the raisin water.
1 c. nuts, chopped, optional
Cream sugars and butter until fluffy. Add eggs; beat well. Add flour, baking powder, salt, vanilla, cinnamon, nutmeg, juice with soda, raisins, nuts and oatmeal. Add more flour/oatmeal to get the consistency you want. This is a somewhat sticky dough. Mix well. Drop by rounded teaspoons on oiled
cookie sheet. Bake at 350° for 10-13 minutes. Makes 5-6 dozen cookies. The original recipe also calls for ¼ tsp. nutmeg, but I don’t care for it in my oatmeal cookies.
I always bake my cookies 25° cooler than the recipe calls for and bake a little longer. Bake a sample cookie to determine baking time. I use a cookie scoop to form the cookie dough into balls. Roll these in sugar or cinnamon sugar before baking. This makes them crispy on the outside and chewy on the inside.
This isn't a traditional recipe, but it's our families favorite. They come out soft and chewy, and sooo good. My husband took them to his holiday party, and his boss sends requests home for more at least once a month. Here's a link, and it makes 6 dozen medium size cookies.

These are the very best I have ever had and are very versatile. I like them best with raisins and dried apples, but have also done chocolate chips or dried cherries. I also did 1/2 white and 1/2 whole wheat flour just last week and they were GREAT.

Makes 4 dozen
Ingredients
* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon ground cinnamon
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
* 1/4 cup solid vegetable shortening, room temperature
* 1 cup sugar
* 1 cup (packed) dark brown sugar
* 1/4 cup honey
* 2 large eggs
* 1 tablespoon vanilla extract
* 3 cups old-fashioned oats
* 1 cup raisins
* 1 cup chopped pitted dates (I use snipped up dehydrated apples, they make this fabulous!)
* 1 cup chopped walnuts (optional)
Preparation

Preheat oven to 350°F. Line 2 baking sheets with foil; butter foil. Blend first 5 ingredients in medium bowl.

Using electric mixer, beat butter, vegetable shortening, and both sugars in large bowl until fluffy. Beat in honey, eggs, and vanilla. Gradually beat in flour mixture. Stir in oats, raisins, dates, and walnuts. Drop batter by tablespoonfuls onto prepared sheets, spacing mounds 2 inches apart. Flatten cookies slightly.

Bake cookies until golden brown, about 10 minutes. Cool completely on sheets. DO AHEAD Can be made 2 days ahead. Store airtight at room temperature.
Use butter instead of shortening in the recipe for the texture you are looking for.
A friend passed this along-we think they're FABULOUS-my husbands favorite cookie! We make it with milk choc. chips, but I'm sure raisins would work fine. They're called Oatmeal Smackaroos!
1 c. flour, 1/4 c. sugar, 1/2 tsp. baking soda, 1/2 c. brown sugar, 1 1/2 c. oats(old fashioned tastes better than quick oats), 1/2 c.(or more) baking chips- any flavor(or raisins), 1/2 c. soft butter, 1 lg egg, 1 Tbls milk.
Preheat oven to 375. Blend butter, egg, milk in large bowl. Blend together all dry ingredients in separate bowl. Add blended dry ingredients to butter mix. Drop by round Tbls 2 inches apart on ungreased baking sheet. Bake about 10-12 min or until lightly browned. (I usually have to bake the first sheet closer to 15 min-just watch them).
Makes between 30-36 cookies, depending how big you make them.

i have an AMAZING blueberry oatmeal cookie recipe if you are interested...out of the norm, but i don't like oatmeal cookies much and THESE are fantastic.

Have you tried cooking them at a slightly higher temp, for a shorter time? That should crisp up the outside a bit without burning them...
