Sort of a last minute thing, i picked up some gluten free pretzels, crackers and a box of brownie mix and a bag of GF flour. to make a sort of snack/ffod basket for my aunt and uncle, uncle has celicacs diagnoses a few years ago. i have some cute dish towels to put with it and it was looking relatively cute, I got the bright idea to add some GF recipies. of course i thought i could just jump on the internet and find some, but i'm so unused to cooking/baking this way that i'm confused. My aunt isn't a master chef, so i don't know if she has xanthum gum and coconut oil etc. It's too late to go pick those things up.
Can anyone recommend some beginner level but tasty GF recipie? or a blog or something that would have some for the average person? maybe xanthum gum is a staple? Thanks!
I wanted to find a few recipies and write them out on recipe cards. thanks for the suggestions.

I'm not gluten free, but I LOVE Lynn's "regular" recipes so I'd bet on her gluten free ones. My FAVORITE thing about this blog is that she does "Keeping it real" posts and shares the stuff that does NOT work too!!
My kids have been GF for years. I found it easier to use regular recipes and just substitute ingredients myself. I never had those strange ingredients on hand but I had rice flour. =D
Also, super easy: peppermint bark -- melt white chocolate chips and add crushed candy canes
Caramel covered popcorn is also GF and makes a tasty treat
According to the Gluten free Girl website, xanthum gum isn't always necessary in recipes. She now tries to go without it because it bothers her system. We made the gingerbread men last year and they were both easy and awesome.
One thing I find really helpful is that our local grocery store, Hyvee, has a list on their website of their products that are gluten free. One of our friends has a gluten allergy and I usually check that list for my ingredients.
I sent an email to blue bunny once asking about ice creams and they said that on their ingredients label, it will say specifically that it contains wheat or whatever if it has an allergen.

livingwithout.com has lots of wonderful recipes. It is also a gluten-free, allergy-free magazine that they might like to have a subscription to. I get Living Without magazine (we have gluten free, dairy free, soy free) and absolutely love it!
