If you have a dutch oven, or a cooking dish with a lid, you can put it in the oven on a low heat, and it will be the same as a crock pot. In fact I do that all the time, I use a cast iron dutch oven
Can I just monitor a pot on the stove? Maybe a stupid question but the recipe specifies a slow cooker and doesn't say "or cook on the stove over very low heat"... I always thought a crockpot was a convenience thing but maybe not? Thanks!

Oven in a sealed container. Do not open it, in a crock pot one is not supposed to open the lid at all through out the process. The lid seals in the heat and moisture. It was explained to me that each time a crock pot lid is lifted it takes up to 15 minutes for the heat to get back to what it was before the lid was lifted. That can add at least another 15-30 minutes to the cooking time each time the lid is lifted.
Yes, it works fine. I have even made slow cooker recipes in a pressure cooker when I forgot to start them in the morning...
If you don't want to watch over it like a hawk it also works in the oven at low temp (like $250).

You can definitely make brisket without a crock pot... but I'd think of it more as an oven roast process than a stove top deal.
Really, you should look up another recipe meant for cooking without the slow cooker. Crockpots cook differently than a pot on the stove because the heat is not just low, but all around the pot, not us the bottom, and the lid stays on so there is almost no evaporation.
If you want to use your current recipe, yes, you can probably do it, but you'll need to monitor carefully and probably add liquid (and scrape the bottom) throughout the process... also, you might not need to cook nearly as long.

You can do the same thing in a slow oven. Start it on the stove and then put it in the oven at 250.
You already said you were going to cook it in the oven but I'd like to add buying the extra thick aluminum foil and having the brisket in that. That is how I make mine, just make a tent with it and then seal it tight.
