You could do what we did for my roommate - get balloons (you can even just blow them up yourself) and "tape him in" with streamers and balloons so he knows you remembered his birth DAY. When he wakes up, voila! Birthday!
My son is turning 3 tomorrow. We already had his birthday party and I have to work at noon to 9 PM. I'm trying to think of something special to do for him before I leave. I was thinking of making Mickey Mouse pancakes, but we did that on the day of his party. lol We have a few more presents, but his dad will be at work, so we'll have to do that when I get home (let him stay up a little later). I want him to know it's his special day. I want to make a big deal of it before I leave. :)
I ended up putting a balloon on his chair, hanging streamers from his bedroom door, got party hats & horns. We made blueberry muffins and he blew 3 candles out. During the day, his dad came home early from work and gave him a hot wheels track and they played together, went to swimming lessons and when I got home, we opened another present. He had a good day. :) Thanks everyone for your input!

Get some balloons, and tonight when he is asleep, blow a bunch of them up and put them all in the living room.. he 'll LOVE it ! unless balloons scare him, most of the little ones I have ever known LOVED playing in a sea of balloons.. they needn't be the helium... just regular old balloons... Also, For breakfast, use a fun birthday party plate and cup...even a party hat and horn to show how special the breakfast is for him.. you could even hang streamers or decorate his chair with confetti and tie balloons on his chair..
hang a banner too.. I mean you could have some fun with this for sure..
You could make cupcakes with him before you go to work. He's sure to enjoy that !
You could decorate the night before with balloons and streamers so he sees them when he wakes up. Then maybe you could take him to his favorite place for breakfast.
Balloons! Helium is getting hard to come by in some places, so maybe you could create a sort of "net" - if he sleeps with his bedroom door closed, tape paper or a plastic bag to the outside of the door, and to the wall where it meets the ceiling, but not along the sides. Stuff it with inflated balloons. When he opens the door, the "net" will open, and the balloons will "rain" down on him.
Or you could just tape the balloons to the doorway, or make a "curtain" out of crepe paper streamers for him to walk through.
Also, there are light-up buttons and hats at most party stores, and he could wear one all day, to let everyone know that it's his special day. If I ever see a kid wearing one, I always make sure to wish him/her happy birthday. I'm sure I'm not the only one!

leave a sm toy or a key w/a bow saying this will lead to or unlock more
gifts for you when mommy gets home
make mickey footprints leading from his bedroom door to kitchen
put a candle in a cookie or breakfast
decorate the table w/Matchbox cars
call him from work later in the day to check on his birth "day"
