We found the best dressing for Spinach salads ( great with crumbled bacon and hard boiled eggs and cherry tomatoes) it is a brand called Girards, it is in almost a diamond shaped glass bottle and the flavor is simply called Spinach salad, it seriously reminds me of the flavors from my moms home made german salad. You could also serve pickled beets on the side with this salad for color. If you aren't against the extra carbs this is relatively easy and my hubby LOVES it, he calls it home fries, I have no idea why but basically all you do is slice a potatoe in rounds, on the thin side but about an inch thick, then slice onions and mushrooms. You want to pour an ample amount of olive oil in the bottom of a deep skillet and then on a low heat you want to slowly cook your potatoes, when they start to soften a bit...you can tell because the color changes subtly you can add your mushrooms and onions...this is a slow process of getting it done I usually keep a close eye on it and turn it occassionally, you can turn it up to a medium heat to speed the process along and it is ok if the potatoes get some crispy edges, when it is all cooked through with a little salt and pepper although it may not sound that exciting it is really good. If you would rather have something you can toss in the oven and forget about? Lipton Soup has this oven roasted Vegetable dish that is yummy
1 envelope Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix
1-1/2 lbs. Assorted Fresh Vegetables*
2 Tbsp. Bertolli® Classico™ Olive Oil

1. Preheat oven to 450°. In 13 x 9-inch baking or roasting pan, combine all ingredients until evenly coated.
2. Bake, stirring once, 20 minutes or until vegetables are tender.

*Use any combination of the following, sliced: zucchini, yellow squash, red, green or yellow bell peppers, carrots, celery, onion and mushrooms.

I wouldn't go crazy making a complicated dessert, I would stick with whatever fresh fruit your hubby liked and vanilla ice cream or frozen yogurt, or maybe a fruit cup?

Lots of luck I hope he has a great fathers day= )

For an appetizer you might try "tasty parmesan bites." You can download the exact recipe from pillsbury.com. I made them once for a X-mas party and now people request them all the time. You'll need a red pepper (diced), 8 ounces of cream cheese, a shaker of parmesan and cans of crescent rolls. Mix 1/2 cup grated parmesan cheese with one 8 ounce bar of cream cheese. Use store bought crescent rolls 4 cans for an 8 ounce cream cheese bar (I cut this recipe in half when I make it for just my family-that is, I use half the cream cheese and half the crescent rolls-the rest stays the same). There are 8 pre-cut crescent rolls in the can. For the sake of time, I use the crescent rolls two at a time and press the seam to seal it making one large, square pastry. Put a couple tablespoons or so of the cream cheese mixture on one side of the pastry and add some red peper. Fold the pastry over, sealing the edges to create a pillow. then use a sharp knife to cut the pillow into 4, 6, or 8 smaller pieces, depending on the size you want the "bites" to be. Place them on a non-greased cookie sheet, sprinkle with more parmesan and bake at 375 for about 15 minutes. They really are tasty and so far everybody that's tried them has just raved. I've tried all kinds of variations. I've used jalapenos instead of red peper, I've skipped the parmesan and substituted cinnamon and brown sugar (skipped the pepper, too!), I've used canned crab in addition to the other ingredients (again, skipped the pepper) and they were all good, but the original recipe seems to be the favorite.

Hope you have a great father's day dinner!

I would start with a nice hearty salad with hardboiled eggs. Then a homemade german potato salad would go well with the bierocks. Then for dessert just make your husband's favorite.
Good luck!
