Oooooh, veggies, my favorite! Okay, well, if I was the one making the dinner, I would have to have artichokes somewhere on the dinner table -- either for an appetizer or for the main course.

Lentils are a terrific choice also. You know, come to think of it, there is a guy named Andrew Weill, MD, who has a cookbook co-authored by a woman named Rosie Daily. She was the Executive Chef for Oprah Winfrey. Just about everyone in this cookbook sounds awesome. Check it out!

Is fish an option? Either way, check out vegetariantimes.com. This website usually has great ideas to use. Remember that legumes combined with whole grains = a complete protein. Mexican is always a good option for our household. Don't just go the salad route. They are a good side dish, but aren't very satisfying as whole meal. Plus as a vegetarian it is usually the only option we have at a catered event, and gets old fast.

I'm a caterer. Are they vegans or just meatless, but eat eggs and cheese. Pasta dishes are very easy to retro fit into either of these categories. Also soy and vegetable and bean patties. Zuchinni patties with curry flavor also very yummy. Think out of the box and channel your creative side.

C., I have seen a ton of squash and zucchini for sale these days. I say if you make pasta, throw in both of the above, broccoli, quartered button mushrooms and make it primavera!

Also, as someone else suggested, legumes are a great choice! A yummy lentil soup over brown rice with a salad would be a wonderful dinner. I recommend throwing in again, tons of veggies in the lentil soup to make it a hearty meal. Allrecipes.com has a ton of great recipes. I just get an idea for what I want to make and adjust it to what I like or don't like OR what I do or do not have in the pantry or fridge. A yummy greek salad would totally round out this dinner. It will be savory and wonderful!
