I like to fry eggs and cheese and potatoes and make a breakfast skillet with my red beans and rice left overs OHHHHH so yummy! Corn bread or biscuits on the side with creamy butter and a pitcher of Mimosas makes for a yummy brunch.
I have delicious leftover red beans and rice (with ham). Instead of just warming it up, or making it into a soup, what else can I do with the leftovers? I was wondering about maybe fried red beans and rice cakes, or turning it into an enchilada filling? Or using it in a casserole with cheese? I'm hoping some of you have some good ideas. Thank you!

How about turning them into a jumbalaya of sorts? Add some shrimp and sauted onions and green pepper and mix it all together?
Red beans and rice sounds so good. I know what's for dinner tonight!

I would add ground chicken, some salsa and shredded swiss (or whatever other cheese) and put it in a tortilla. Do this till you fill your baking dish with tortillas. Add enchilada sauce and more cheese. Bake until the cheese is melted and browned.
Serve with sour cream.
If you use swiss, and chicken with the ham, red beans and rice it would be a Chicken Cordon Bleu Enchilada.
I frequently make a rice, beans, and meat (chicken, sausage, or ham) type of jambalaya..... I always put in some veggies, like onion, green pepper, and tomato. My favorite way to eat it is in a flour tortilla with some shredded cheese!
I would do jambalaya or burritos, myself. Or stuff a pork roast or chicken or green peppers with them.
Freeze it to use later!
That sounds good with a macaroni and cheese casarole type of thing with added broccoli.
All of those options sound good. You could also put them in tacos.
take the red beans and rice and add a chili mix or taco mix and a blob of sour cream and a can of corn. put it in the oven and bake when it is bubbly add some cheese on top. should be amazing. I use chili mix and beef stew mix for a lot of different casseroles and soups.
Scramble eggs, warm beans and rice, roll in a tortilla with a little cheese for a great breakfast burrito. Mix with red pasta sauce and serve over pasta - something hearty like bowties or rotini - for pasta that is both tasty and different.
