I bought cupcakes for my daughter's preschool class, it's her birthday tomorrow. They are vanilla cake with butter cream icing, should I put them in the fridge over night or leave them on the counter ? I did call the bakery, they said fridge, but won't it dry them out? What do you do?? Thanks!!

What can I do next?

I make my cupcakes from scratch, and I put them in my freezer if I need to store them over night. It actually prevents drying out.

I'd store half of them in my stomach most likely.
I'd throw them in the fridge, they will be okay after they reach room temp again.
Just make sure your fridge doesnt have any aromas in it, like onion or garlic or fish and such.

Fridge....unless you want to eat them all tonight :). I always get the ones for my kids right before I need to drop them off...but I have that luxury normally.

I sometimes work with a friend of mine who owns a cupcake shop (a yummy place to work!). She always stores them in the fridge, but before they go out on display, she sets them out for about 20-30 min or until they get back to room temperature. The fridge doesn't dry them out. Occasionally, if she makes them late the night before, they can stay out on the counter and be just fine. Good luck!!

I'd put them in the fridge covered, then take them out first thing in the morning so they'll be moist by the party.

You already got answers - when I read your question, before reading your actual post, the first answer that came into my head was...

In my stomach! :)
- then on my stomach, butt, thighs, etc :( LOL

When I make regular cupcakes with butter cream frosting I store them at room temperature. Make sure that something dairy like cream or milk isn't one of the first ingredients in the frosting and you should be fine. The icing may contain butter but that's fine at room temp and the sugar preserves it.

They will be FINE sitting out. I never put them in the frig and I bake all the time.

They don't refrigerate bakery at the grocery store or the bakery so why would you do that at home?

No, they won't dry out overnight. The icing protects them. Just take out of the fridge a while before serving, to bring the back to room temperature. Happy birthday!
