Homemade Cupcakes Question

Kiddo's birthday is on Wednesday; his party is on Saturday. Here's the challenge--

He wants cupcakes for both moments (family celebration and friends party). I want to make the cupcakes (to avoid HFCS-- which wigs him out) and am trying to figure out how to only have to cook these things once. Is there a way to keep cupcakes fresh from Weds to Saturday, or am I stuck making two batches? (I'll likely use an Dr Oatkers mix and make some frosting at home.)

Any ideas/suggestions? Family celebration will be just us three (so think three cupcakes) and party will require about 12-15.

So What Happened?

Thanks ladies. My husband and I made a plan to buy three cupcakes from a good bakery nearby for Weds and I'll do the party ones on Friday.

Freeze them, whenever I make cakes and have left over batter I'll make cupcakes, toss them in a freezer bag and use them at a later date. They taste great and when we have a sweet tooth we can just pull them out.

I think if you wrap them tightly they will last in fridge. However, if Saturday is the day you want to impress, then I would make a new batch. Nothing tastes like fresh.

They will be fine if you do not frost. Just make sure they are covered or stored in Tupperware type container.

I once had to make 50 dozen cupcakes, I just froze each batch..

Make sure they are completely thawed before you ice them..

I find that freezing baked goods diminishes the flavor. Part of the appeal of baking homemade cupcakes is that they taste so much more flavorful than the junk in the box mix. The only flavoring shouldn't be icing. I would probably see if there's a local vegan bakery and just pick up three for the day of the birthday and then on Friday bake the cupcakes and Saturday ice them. They'll taste so much better than freezing them ahead of time.

Do not refrigerate baked goods. Doing so dries them out and causes them to go stale. Freezing works very well.

I always make the cupcakes a few days ahead, frost them with homemade buttercream and freeze them. I take them out about an hour before the party starts. If I put sprinkles on I put them after they thaw, otherwise the colour tends to bleed and run when they thaw.
ETA: Fridge will dry them out, but not the freezer.

Should be ok if you wrap them in plastic and stick them in the fridge/freezer. Just be sure to not overcook them, since refrigerating can sometimes dry them out. Don't frost them until the night before the party.

Or just serve him a dish of ice cream for the family celebration. You can stick a candle in that pretty easily.
