Pork ribs are the best too cook.. They are almost a fail-safe meat to cook on the smoker.. I grill mine 2-5 mins both side to sear the meat .. Then wrap them in foil.. And slow cook them on the smoker.. When there about 30-45 mins from being done start applying your BBQ or continue to reapply every 5-10 mins.. They will be great..

I'm not sure about the smoker but I second the advice of simmering them on the stove for over an hour, coating with bbq sauce and then putting on grill or in oven. They always are so tender and fall off the bone.

I don't know about using a smoker but agree that the pork ribs cook the best. I cover the rack with sauce (I'm not creative enough to make my own so I just use a bottle brand) on both sides then double wrap them tightly with foil and bake on a cookie sheet/pan at 250-300 for 4-6hrs (the longer the better at the lower temp)then throw them on the grill for just a few minutes to brown. They always fall off the bone of the grill before I can get them to the plate!

You know, I don't fix ribs very often....but my mother used to season the ribs and boil them ahead of time on the stove-top...with enough water to cover them. She'd add more water if she needed to, like you do when cooking beans. Then she'd drain the ribs, and pat them dry...slather them with a good bbq sauce (her sauce was homemade) and brown them on the grill or under the broiler. They were always so tender they'd just fall off the bone. You might see if this works for you.
