Here are a few ideas. My daughter likes yogurt covered raisins, sunflower seed nuts, grapes, and string cheese. I put several things in a muffin tin and let her graze.
My 2 year old son wants to eat from the time he wakes up until the time he goes to bed unless it is meal time. I would like some healthy snack ideas if you ladies have any to share. Right now he eats crackers (I know not so healthy), orange, apples, dry cereal etc... Alot of the snacks that he likes are CARBS CARBS CARBS....

My 2 year old daughter it the same way! She's a suger fan but we try to detour her with applesouce, mandrin oranges (both are packaged in individual sizes which is handy) She also likes pepperoni's and string cheese as well as pickles and pretzels but like you said, so much is carbs carbs carbs! She not a fan of peanuts but that's an option if your little guy likes them.

Try the fruits with yogurt. There are many different flavors you can try.
do you think that he isnt eating his meals because he is snacking all day? i have been guilty of this as i hate to tell a little boy that he cant eat, but noticed that my toddler eats SO much better when i am more scheduled about snacks. just an idea.
snacks my 26mth old loves: carrots, broccoli, grapes, yogurt w/ homemade granola, cereal, peaches, oranges, crackers, cheese, warm milk in a coffee cup (thinks he is having coffee), peanut butter and jelly sandwich, toast, applesauce, mandarin oranges, string cheese.....
