So I am a novice in the kitchen, but really looking to expand our meal plan. I am tired of meals always focusing on the meat as the main coarse. I want those veggies in the center and the chicken fish beef or otherwise to be an after thought (or not at all). I am looking for a website that can add flavor and satisfy cravings.
I love eatingwell.com. But would adore some similar sites or suggestions for recipes or good cook books. Please help me! I feel like cooking is the best way for a 'stay at home mom' can tap into her creative side. Let me be inspired!!! Thanks

You will want to try her books like QuickFix Vegetarian, Fresh Vegetarian Slow Cooker and One Dish Vegetarian. They have great recipes with mostly stuff you get at the regular market and they are OUT OF THIS WORLD delicious. I made a tomato soup and split pea, my husband said it was the best he ever tasted! One recipe called for Israeli couscous so I just used regular couscous. It was great...so subbing is okay.

You will love her recipes. She has a few "try" recipes on her site as well.

Try vegetariantimes.com for some great recipes. Smart Sausages Italian (veggie) are pretty good in pasta dishes. I buy them at my grocery store and Trader Joe's. Also the Morningstar Farms crumbles substitute well for ground meat - and you don't need to brown them first which can be a timesaver. If you like mushrooms, portobellos can be swapped out for meat. I make fajitas from a mix using big hearty slices of the grilled mushrooms instead of meat.

So why not use less meat than what the recipe calls for and use fresh vegetables. That's healthy.

My dietitian partner and I write a blog with recipes. They're all vegan, and they are also free of the top 8 allergens and gluten-free. It can be easy to try moving away from meat only to find out that you're just eating cheese, soy and wheat (I've been there!). I just came across a website a few days ago that caught my eye called Eat Better America. I haven't had a chance yet to really explore it, but a few of the recipes I did read looked tempting and easy. Here is the address:

I've been getting the Cooking Light magazines for years and love them. I clip out the ones I'd like to try and put them in a folder. Once we try them and like them they go into my 3 ring binder with clear plastic pages, and that is my cookbook. They also have a website. I love the recipes like Spinach Manicotti (sometimes I add a little Italian sausage) and Chili Cheese Black Bean Enchiladas. Cooking Light also has cookbooks, (but I prefer looking at the pictures in the magazines :).
