Cook it with greens (mustard, collard, turnip) and a bit of cider vinegar, a dash of sugar -cook on low and simmer until the greens are really cooked down. YUMMY! Also great cooked with any kind of peas or beans slowly over several hours -especially if you throw in some chopped onion and chicken broth. I like using dried beans that you soak overnight, wash thoroughly and then cook.
Throw it in some water with an onion, green bell pepper and some chicken bouillon and some white beans...bring to a boil then simmer all day.
Make sure to presoak or do the quick soak on the beans...then follow the cooking directions...which is basically the same as what I said above!
Serve with some corn bread (or better yet, some jalapeño and cheese corn bread) and enjoy!
buy a bag of split peas. Instructions on the back of the bag of how to make split pea soup (celery, carrot, ham, broth, peas). We add lots of fresh ground pepper and serve hot with toasted buttered sourdough bread.

Yes you can cook with a ham hock. Just put it on a medium boil add a little seasoning and then add your other ingredients. Depending on your medical limitations, you and even choose smoked neckbones or smoked turkey wings cooking them the same way.
For persons with high blood pressure, the smoked turkey wings would be better. The smoked neckbones allow for a different texture. I use some onion, pepper black and red pepper, or your seasons to taste.
We use it with string beans; greens, speckled butter beans, Just to list a few, and we use it as a soup with the vegetables that make the soup and add some rice. If you want you can use pototaes and all the rest, works just as good
I use the turkey wings, not as salty as ham hock; no one can really tell the difference in my house. They still enjoy it.
If you don't want to stand over the stove, you can use your slow cooker and do the same thing; ;just start cooking the nite before or early before you leave for work. Just make sure you don't add too much water in the slow cooker.
