Good Veggie Meals

I would like some ideas for some good vegetable meals. I'm going to try & eat more veggies & avoid a lot of meat in order to try & lower my cholesterol.

Here are some quick ideas to start:
*steamed veggies and baked yams/potatoes
*add a salad to your lunch or dinner every day
*veggie sandwhiches (tomatoe, avacado, shredded carrot, bell pepper, cucumber, mushroom etc.)
*raw veggies with hummus and pita bread (this makes a great light and quick meal --cauliflower, snap peas, carrot, celery)
*bean burritos piled with veggie fixings (lettuce, tomatoe, bell pepper, cilantro, avacado, corn, rice)
*veggie calzones (you can put it any kind of veggie you like really)

One of my favorite cookbooks is "Fresh from the vegetarian slow cooker" It has tons of ideas for crock pot meals (lots of soups, stews, bean dishes etc) You could probably find it online.

vegweb.com would be a good place to venture onto, but honestly just taking your own recipes and making them 'better' is a great way to change a few things. Here is one that is popular on the site:

One of my favorites is getting a vegetable gumbo mix from the frozen section at the store and adding a big can of diced tomatoes and having it with cornbread. lol

Starting a garden and finding the wonderful things that you can create with your 'rewards'.

I totally understand. I am trying to eat more vegetables as well (after I noticed that we have meat nearly every night). I make Veggie Lasagna (you can google for recipes) I also make lentil soup when I am pressed for time (I just boil lentils and add salt and pepper than everyone can chose if they want butter, sour cream, cheese, green onions, etc. I also make veggie pasta (I make a cream sauce and add bell peppers and basil (you can add a variety of other vegetables as well).

I like to make spinach rice casserole. I've used a lot of recipies from the La Leche League cook book "Whole Foods for the Whole Family." The good thing about this cook book is that there are plenty veggie recipies of everyday ingredients that you can usually find in your pantry. Also, if you are watching your cholesterol, be careful of the oils you use, and don't eat out much. Hydrogenated oils can cause your body to produce more of its own cholesterol. Sometimes you're better off with the animal fat. A good example is margirine and butter. Lean meats are ok. I make my own salad dressings to avoid the hydrogenated oils, and it's easy to do. My cholesterol is 165, and my HDL:LDL ratio is very good.

Look online, there are a zillion recipes! search for ingredients you like, chickpeas, lentils, beans, or vegetarian meals. I'm trying to learn to like lentils, so I'm trying one new recipe each week and taking it to a potluck at church so I'm not stuck with a huge pot of something I didn't like. (or my family wouldn't eat!)
also make smaller quantities so you don't have tons left.
shop mainly for the beans, grains, vegetables and don't buy any meat. If it's not there, you won't eat it.
A vegetarian surrounded by carnivores . . .

I only eat meat maybe two to three times a week and in between, just veggies for dinner. One that is very easy to fix and inexpensive and delicious is to cube or slice thickly one zucchini and/or yellow squash and you can do this with green and red peppers, as well, then drizzle some olive oil over them and let them sit for a minute or two to absorb that. Sprinkle some seasoning -- it can be garlic, or what I use is Everglades Seasoning, or seasoned salt -- whichever you prefer -- heat up your pan (I used one that has grill ridges in it) and pour your veggies onto the heated pan, turn after about one minute, grill on that side. Then eat and enjoy. I often have some rice with it. It's filling, easy, fast, cheap and good! An acquaintance told me about it and I've been cooking it ever since.
