Gluten Free Meals

I am not much of a cook and now my 19 month old daughter can't have wheat. I need some easy to prepare meals. She loves rice and all veggies but I am having a hard time with the meat. I used to serve chicken nuggets or fish sticks but now that is out. I love to cook casseroles too but I can't use cream of mushroom soup anymore. Any Ideas would help.

Get some boneless chicken breasts and bake several ahead of time in a glass baking dish, Season appropriately. Cut into small chunks and then freeze. When it's time for lunch, grab a single chunk out of the freezer and heat it up.

Just thought I'd also throw this out there...you don't necessarily have to live with food intolerances. My chiropractor is doing laser treatment on me to treat my intolerances. He has succesfully treated me for oat and dairy thus far and I have had a couple of treatments for wheat...that is one I am really allergic to so it's taking my body a bit longer to respond to the treatment. I am going in today and he will test me again to see if I am still allergic to it. He does other allergies besides food, too (like I also had pesticides, mold/fungus, and gasoline treatments and will probably also need to be treated for dogs).

I highly suggest you give it a try. It would certainly make your life a lot easier!

If you are looking for gluten free, look on the labels of food at walmart, lots of their store brand stuff is gluten free and says so in big letters on the back of the label with the rest of the nutrition info.

Check out this yahoo group, it's called Foodlab, and most of the members on there have kiddos with some sort of allergy that they have to plan food around. (Lots of gluten free people on there as I recall)

I have a friend whose son is allergic to gluten and has always struggled with what to feed him. I know that she recently discovered that there are a lot of Homemade Gourmet products that are gluten-free and super quick and easy to fix. (And they taste great too!) If you already have an HG rep, she should have a chart that shows you which mixes you can use. If you don't already have an HG rep, I can refer you to a great one that is already familiar with dealing with the gluten issue for my friend.

Good luck! I know this can be a frustrating issue to deal with but it's becoming more and more common so there are an abundance of resources and support groups popping up everywhere that can offer assistance.

I have been gluten free for about 3 years now and it was difficult at first but there are many resources available to you. Market Street in Colleyville also has lots of products and classes you can attend as well.

As for casseroles- (read the labels) - but I believe the the cream of celery is gluten free (Amy's brand). Try this in the same recipes or cream of butternut squash (organic) was gluten free. You can also just steam chicken in small pieces for her.

There is also a magazine called "Living Without" that has great recipes and ideas in it. They have a website too I believe.

Things to watch out for: Soy sauce (can buy it Gluten free), sauces are restaurants and even meats can sometimes be marinated in a soy based sauce - always ask about it.

It may seem difficult at first but it does get easier. I went to a gluten free cooking class at whole Foods a while back and got some good recipes for cookies, banana bread and such.

Check out Sprouts and Whole Foods (FM Specialty does carry a few meal mixes, just not alot, however it is a great place for info and breads and junk food) - both have a wide variety of gluten free foods. Ian's makes gluten-free fish sticks and chicken nuggets. Wellshire farms also makes dinosaur shaped chicken nuggets, as well as corn dog nuggets. The latter I have only found at Whole Foods. I would also recommend Bette Hagaman's Gluten Free Cookbook - Fast & Healthy. She has all sorts of family friendly recipes and great hints on prepare ahead mixes. Also, check out the website at www.dallasrock.org (ROCK stands for Raising Our Celiac Kids).
Our family (all celiacs following a GF and CF diet) are slightly cautious of Amy's products, as they did an issue with cross contamination during their manufacturing a while back. They did acknowledge it finally, so hopefully, the problem is fixed. Also, check out dfwceliac.org - they have good info, as well and links to lots more websites. I also maintain a Yahoo group for folks in the Flower Mound/Lewisville area, so let me know if you have an interest to be on that group - it is very small, but we have started caching recipes.

Check with Mary Hunt (owner) of FM Specialty Foods in Flower Mound. She and her daughters have celiac and eat gluten free diet all the time. She has been a wonderful resource to me. Her website is: http://www.fmspecialtyfoods.com/

Ian's brand makes a gluten free chicken nugget and possibly a gluten free fish stick. They are sold in the freezer case.

Annie's makes a rice pasta mac & cheese that tastes pretty good.

You can go online(I found one on ebay) and type in gluten free and it will come up with cookbooks you can purchase.

There are plenty of things in stores now that are gluten free. Some stores have whole aisles of gluten free. I make a lot of homemade foods. You can get a different kind of flour (rice, amaranth, quinoa...) and make chicken nuggets, etc. There are also good cookbooks out there that you can use. You may also have to make cream of mushroom from scratch w/ a flour she can eat. It's harder, but it's definitely doable. My son is allergice to wheat, eggs, milk, peanuts, pear/apple, and lots more so if he can eat, I'm sure you can find something for your daughter. Good luck :)
