I would love some gluten free lunch ideas that do not have to be refrigerated,
The lunches are for my teenage son to take to school. He will not carry a lunch bag with an ice pack.

And if he carried lunches in his backpack who would know he has an ice pack? I mention this because with terns it's usually image :) Involve him in the preparation, too, since it's his health you're doing this for. He needs to learn to care for himself.
My daughter is gluten free and she likes to pack a rice cake with apple butter on it. I do add other stuff that does require an ice pack, like yogurt, cheese, fruit. You can find crackers and cookies that are gluten free. Corn chips, veggie straws. It's not all really healthy stuff, but if you can't do any cold food, then it's a bit harder to do. My daughter also loves rolled up turkey meat. Sunflower seeds are good too. You can find some good gluten free bread and make PB&J.
A partially frozen water bottle works as an ice pack, so you can put anything you want in there and stick it in a paper or plastic bag.
As far as gluten free, my kids LOVE fried rice. I make it myself so it's healthier, and it it's fine at room temperature.
Peanut butter or Nutella on rice cakes.
Fruit, fruit salad, gluten free pasta salad.
Gluten free chips or crackers with cheese, yogurt.
