I have so many that I love, I don't know where to start. Our son cannot have any dairy or gluten so we basically eat a whole food diet with a lot of grains, legumes, meats, veggies, fruits, and nuts.
Some of our favorite snacks are almond butter balls, pumpkin bars, hummus and corn chips. Some of our favorite easy meals are homemade chicken fingers (made with almond meal)....our kids love these, marsala chicken, Tinkyada brand brown rice pasta with homemade pasta sauce, and homemade chicken sausage patties.
When you go completely gluten free it can be overwhelming, but we have a great gluten free support group that publishes a shopping guide each year and it lists all major brands and products and if they are gluten free or not. One year Ragu pasta sauce was safe, but now they aren't.....they add wheat flour as a thickener. Gluten is everywhere......soy sauce, salad dressings, pickles, cereal, shampoo, medicines, lotions, toothpaste, etc. It is frustrating sometimes (and spendy), but well worth it. Things like almond meal, coconut flour, GF bread, etc. are so expensive.....buy them in bulk and save a ton.
