My neice is turing 2 in just a few days. She doesn't need toys or clothes. I know there's lots of creative and unique things to do for her birthday I just dont' know what they are. My nephew and son are only 2mns apart and they get everything they need some the grandparents, aunts and uncles, so my sister-in-law and decided that we will get them each a very small toy (like my nephew is into Hot Wheels) and then we will put money into their college savings account or something along the lines of that.
So, this year for Christmas I purchased a stock for my nephew. He lives out of state as well, but when they visited this past May we took him to Disneyland. So, we purchased him one share of stock of Disneyland.

How about tickets to something, such as the fair, a musical, Disneyland, Sea World, museum, etc. It depends on what they have in her town for her age group. You'd have to do some research. Otherwise, you could get her a savings bond. My son recently got one from his aunt and grandma for his 2nd birthday. He got them last year for his birthday too. I'm saving them for his college fund.
how about naming a star after her and they ever get a beautiful certificate could be fun

Just an idea...send money to start her college fund.
The only suggestion that I have is an Ipod touch. It sounds crazy but I purchased one for myself and now my two year old plays with it more than I do. I have downloaded cartoons for her to watch but she knows how to stick the earbuds in her ears and she knows how to operate the touch screen and everything. It's amazing to watch actually but like your situation my daughter has a lot of toys too and although I bought her more toys for Christmas, her favorite is my Ipod.

How about a US Savings Bond? I know she won't appreciate it now but down the road it will be nice. My grandmother used to buy one a month for me when I was growing up and once they matured (some are still gaining interest) I had/have a nice amount of money. You have a lot of suggestions... it seems most people like the idea of books and savings bonds or money for college. Those are great ideas. Personally, I would really like a gift certificate to Picture People or a portrait studio for pictures. We all love pictures of our kids but it is a killer when the bill comes! I had a gift certificate one time and that is the time I got the pictures framed and more poses. Gift certificates are cheap to send too!
it might be cute to take ur son to one of those pottery places and have him personalize and paint something for his cousin. Maybe a frame and u can put a picture of them in it, or a piggy bank. Gifts from the heart are always treasured. Then just added a little something for her when she opens it such as some cute bath toys or playdoh, crayons (the no mess ones) stickers or a DVD. Those are things that are always go to have plenty of. Hope I gave a couple ideas.
I would check out Lakeshore, they have wonderful educational toys/hobbies for all ages that are engaging.
I think a magazine subscription is a great idea. My son has TONS of toys, and he didn't need any more for Christmas (even though he got a bunch!!). My sister gave him a year subscription to Babybug, and I love that he has his own magazine being delivered to the house. To go along with the book club idea, you could maybe get her a subscription to a childrens magazine (possibly Ranger Rick or Zoo, if they still exist). The pictures of the animals and nature would give her lots to talk about and her parents can save or recycle them as they see fit (won't add to all of her 'stuff').

A photo album of her whole family would be special. You ca make really cute ones on Shutterfly.
Something that will be a keepsake is a good idea - maybe a double photo frame with a photo of her mom (or dad) at the same age on one side & her on the other, other family/ancestor photos, one of those "the day you were born" printouts, or a certificate with the origin and definition of her name (with an appropriate scripture, if her family is religious.)
Books are always great and she will have it forever. Put a little note in the front so she will remember that it is from you and you love her.
How about a magazine subscription? There's so many for kids and they get something in the mail every month. I like Wild Animal babies, Babybug, Ladybug, etc.

My daughter was given a $2 gift certificate to Baskin Robbins. We made a really special trip to the ice cream store and she LOVED it. We would not have taken her at 2 necessarily, but man was it fun. (and inexpensive for the giver! They had packaged it with a book as well).
Also, paying for her to have an experience somewhere. An art class, a gym class, a day at the zoo, etc. etc. These things create memories and don't need to be a physical toy.
Savings bonds, starting a college savings account, gift certificate to the YMCA for swimming lessons, gift certificate to a Gymboree or JW Tumbles or Little Gym for tumbling classes, Twosy Doodlers by Abrakadoodle art classes, membership to a local zoo or animal park, paying for kid classes at a local rec center...I encouraged my family to give those kinds of gifts when my son was 2 and 3...those are great gifts, and so appreciated, because they can be enjoyed again and again!!!

I would suggest a savings bond. That way when she's older and really wants something, she can spend it and think of you.
Both the Aquarium of the Pacific and the LA Zoo have programs where you can "adopt" an animal and get information about them and keep up with their care and feeding. It's educational and doesn't clutter the house :).
maybe send her simple craft things - finger paints, coloring books, crayons. my 21 month old daughter just had her first finger painting experience and loved it! i had fun too lol... she also loves to color with crayons. so think about those things because its something that she can do now (painting with supervision of course) and she wont grow out of it right away. also my daughter loves to put jewelry on so i bought her a bunch of plastic bracelets necklaces and rings (only because she doesnt put them in her mouth). and dress up clothes. she loves it! good luck im sure you will find something great!

Go to a Hallmark store and make a vocal Happy Birthday from your son and you. You can sing a song, say something to her, etc. Even attach a song if you want too. Then there is a place for you to put a photo of you two on the front of the card. She will love to hear your voices and the music afterwords. Just ask the clerk in the store where those specific cards are located.

I know you said you aren't crafty, but there are some easy things that anyone could do. Maybe you could get some wood letters to spell out her name, you can get them at just about any craft store, paint them, glue little butterflies or what ever on them, and they can be hung on a wall in her room.
I always tell people who don't know what to get for my kids to "invest in their future".
Either US Savings Bonds or money for their 529 Plan accounts or for their savings accounts. My kids are 4years and 20 months old. So they are young enough to not really care about getting more toys and stuff.
So I tell people to put money towards their future and then send my kids something cheap and small for them to open up.
But if you want to actually get something for your niece, here are a few things that my kids really like.

Play food for their kitchen
Soft, cuddly blankets
baby dolls
Gummy snacks...my best friend always throws in a bunch of snacks into my kids gifts and my kids love it more than the gift itself.
How about a savings bond or buying her a share (or 2) or a really solid stock. I know this may not sound very fun, but at 2, she won't really know the difference, but in the long run it could really benefit her. Plus other peole could add to it or continue to do the same & at the point that she's out on her own, it would have grown into a nice little nest egg for her.
Sign her up for a bllok club to receive a new book each month. It was the best gift that soemone did for my kids. You can google childrens book clubs and find one that works for her!

Find out what amusement places, zoos, or museums are in her are and perhaps get a membership to it.
You can also send gift crtificate to the movies or ice cream places.
Music CD's are great too. Playhouse Disney has a CD and I think Nick Jr. has one too. Disney Mania CD's are all the classice Disney songs remade with a hipper tone. Disney also sells greates Hits CD' of original movie songs. Kids Bop has tons of CD's as well.
A book of stickers or several packs of stickers she can use up. My 2 year old neice loves stickers. I got her some along with one of those magnetic puzzles from Doug and Melissa. She did enjoy the puzzle (but she had one similar to it already), but her whole face lit up when she saw the stickers. Sounds simple, but hey she is two!

Buy a Kiddie Kangaroo so your niece can keep her "everythings" with her while traveling in the car or stroller. All of my kids (2,4,and 5) love BUild A Bear. Yes it is a toy, but it's one they get to design themselves, name and love. A gift card for there would be great. The cheapest you can really get one is $20 so it can get pricey.
I'd get her some books. There is a cool book called GALLOP. Each page has a different animal on it and as you open the page it looks like the animal is running. Pretty cool. I've given it to 6-7 people and my kids love it.
Or maybe give her a subscription to Discovery Kids or Animal Baby or something you can just renew every year.

A lil one can never have enough clothes lol. But seriously, if you can find it (CVS or a dollar store) you can get her a paint-it-yourself piggy bank. They come in puppies, pigs, cows, cats, etc and they come with their own little things of paint (obviously mom and dad would have to help her with it) so the kid has complete control.

I'd make something for her called, "bucket of fun" or "(her name)'s treasure bin". Get either a small beach bucket or plastic storage bin and fill it with different play things like bubbles, sidewalk chalk, crayons/markers, coloring book/tablet of paper, stickers, little toy figurines (favorite cartoon character), punch balloon, play-doh, etc. You can make it super cute by decoratng the bucket/bin with puffy paint.
