freezIng Lasagna

Hey all,

I'm gearing up for the arrival of baby #2, and I want to freeze a dish of lasagna (among other things). Should I bake it before I freeze it or just assemble and bake it for the first time when we eat it?

I agree with the pp...either way is good. I cook mine first and then I cut it into pieces and wrap them all individually so that I can pull out just what I need. Congrats on the new little one!!

well as baker , I was taught anything can be frozen. Raw or cooked ;)

you can do it either way.
It freezes well, either way.

Either way does work well. If you are going to be using the oven to warm it to eat then I suggest freezing it prior to cooking or under-cooking it a bit before you freeze it. If you are going to be microwaving to warm it then cooking prior to freezing works great.
Love the idea of individual servings--will do that for my elderly aunt from now on!

My Sicilian Granny taught me to make huge pots of red sauce and meatballs and to always, always assemble the lasagna and freeze before baking. (Oh, line your baking dish with aluminum foil, build you lasagna, freeze then pull out the frozen lasagna and put the dish the away for later. Tinfoil wrapped takes up less room in the freezer.) She would pull out the wrapped lasagna, pop it into the dish, and straight from the freezer into the oven at 350 degrees.
