Freezing Armadillo Eggs???

I want to make armadillo eggs for next weekend. I was considering making them tomorrow and then freezing them. I googled it and saw where some people freeze them and reheat later. Just wanted actual testimony that it works.

BTW... armadillo eggs are where you stuff a jalapeno with cheese and then wrap it in sausage. Cook it until the sausage is no longer pink and then wrap all of that in a biscuit. (In case you were wondering. :) )

SB, my son goes to school in Texas, and I asked him if he has eaten any armadillo eggs, before I saw your clarification. My husband was laughing at me over that!

I figure... once it is cooked (especially the raw sausage), then it is fine to freeze. Then, less of a chance of food poisoning via the "raw" sausage, if it were frozen while not cooked, yet.
