On my quest to lessen my prep time for meals during the week, I have a question.... My family loves sweet potato fries, however it takes so long to peel and cut them. So my question is, after I peel and cut them, could I simply just freeze them???

I don't know why you wouldn't be able to freeze them. They sell them in the frozen foods section of some stores with the french fries. You might want to do a search online to see if they freeze best raw or if it's best to blanch them or toss them in a bit of oil or something before freezing. Or you could just experiment. Good luck

I just bought frozen sweet potato fries at Super Target the other day, so I'm sure you could? Unfortunately I can't tell you how, I just was wondering if you would share your recipe for them! I LOVE them too and so does my 21 month old son. :-) Thank you!

This is so great that you asked this. I just made SP fries this week and had the same question. I would rather freeze and heat these up quickly for my kids rather than tater tots. I made a ton of them, let them cool on a cookie sheet...actually I put them outside so they froze a little and then I bagged them up in portions for the freezer. I have not tried them yet,,,,so not sure if all the work will be worth it when I reheat.

I don't think you can just freeze them. Store bought frozen fries are processed with oil and who knows what else to keep them presentable. I would try blanching them and freezing them in a single layer on a cookie sheet. This will prevent them from sticking together. Once they are froozen you can put them in a container.

Hi E.! I am a sweet potato fry addict! I think if you would just freeze them they would get black. If you cut them up could you blanch them in boiling water for a few minutes? Then cool and bag in a single layer and freeze. I have no idea if it would work but partially cooking them would start the cooking process enough that the fries wouldn't oxidize and turn black or brown.
I am going to try this today! Thanks for bringing it up!

I wouldn't freeze them raw. I'm not sure how you make them, bake or fry, but I'd make up a big batch and then freeze the leftovers after they cool.
