I am looking for good, healthy recipes for meals that I can take to a friend that just had a baby.

This is what I am bringing to my neighbor this week sometime. She just had her third.
Chicken casserole

Cut up chicken brests maybe 4 or 5
1 can cream of chicken soup
3/4 can milk
Cheddar cheese grated
Ritz crackers
butter, 3/4 to 1 stick

Thaw chicken and cut up. Put in casserole. Combine milk and Cr of Chix soup. Pour over chichen. Sprinkle with cheddar, as much as you like.
Smash Ritz and add melted butter. Sprinkle this on top. Cook for 30 minutes or so unitl chicken is done. 350*

Serve with a bag of salad and brownies.

Hi J.---I like to use www.eatingwell.com and www.vegetariantimes.com when I am looking for new recipes. I will also look at www.foodnetwork.com if I don't find what I'm looking for at the first two sites. Eating Well has a huge site, with lots of great ideas for quick meals, vegetarian, ethnic or kid friendly meals.

For a new mom who is breastfeeding, but sure to keep spices and exotic ingredients simple, until she knows how the baby will react to digesting those foods on his/her own.

A nice rotisserie chicken with a big salad and some rolls is always great, easy, healthy and not something that has to be eaten right away.

I know new moms get LOTS of casseroles sometimes - so when I bring a meal - I try to bring something a little different.

As someone who received meals after my son was born, I know your friend will appreciate it! Anything you bring will be well received, trust me. A casserole or freezable meal is nice to present, that way they don't need to eat it right away. I use www.tasteofhome.com for most of my recipe ideas.

One meal that stood out to me was a dish that another mother made me: a huge fruit salad (I remember the giant blackerries to this day), a big green salad, fresh rolls, and a family sized bottle of organic juice from Trader Joe's. It was a really fresh, healthy meal.

Another nice meal was chicken tacos. My friend gave me all the parts in reusable tupperware, and we assembled ourselves. So, she brought soft whole wheat tortillas, grilled chicken, black beans, shredded cheese, tomatoes/lettuce, fresh cilantro, and salsa/guacamole on the side. Oh, and that same friend also packed some orange juice and banana muffins for the next morning, and that was a special treat!
