FAST - Need a Recipe for Dinner

I need to start cooking and I wasn't able to go to the store today. I have defrosted chicken thighs with the bone in. I was originally going to make corn flake chicken, but I am out of corn flakes. I need to do something with what I have in the house (which unfortunately isn't much right now). But I do have probably every seasoning you can think of. So, lay it on me, what the heck can I do with this chicken. BTW - my family is not at all fond of lemon, so let's stay away from lemony recipes. I am making mashed potatoes and a veg to go along with it. Your help is greatly appreciated.

What can I do next?

So What Happened?

Thank you all for your great ideas. I used the first idea and just tweaked it a little bit. But you have all given me great ideas for other nights.

I LOVE this recipe, and it's not like you HAVE to do it with the potatoes (although they are delicious!) Good luck!

ETA: Saw you're already doing the mashed potatoes, so just leave the roasted ones out! :)

I know I'm too late for tonight too, but man, chicken thighs are so versatile. They are good with just a dusting of seasoned salt, pepper, a little flour and fry them up in some grapeseed oil.

Salt and pepper without flour, and just saute in butter and a little oil of your choice.

Also, easy to season them and roast for about 20 to 30 minutes in a 400 oven.

Do you have a can of tomatos? De-bone the chick so it cooks fast and add a can of tomatos and a bell pepper or onion or any other aromatic veggie you have. The canned tomatos will make like a gravy!

Preheat oven to 350 degrees....IF you have a can of cream of mushroom or chicken....salt and pepper you chicken, in a cast iron (or oven proof) skillet, brown them skin side down until nice a golden, turn and brown on the other side. Mix soup with a cup of milk, pour over chicken (skin side up). Bake about 45 min (til done). There will be plenty of sauce for your mashed potatoes.

PS...you can do the same with pork chops.

It sounds crazy, but I love chicken baked with nothing more than garlic salt and lemon pepper. The lemon is subtle. 20 - 30 minutes at 350 degrees. Delish!
