Egg Substitute (Son Is Allergic)

I am trying to find a waffle recipe for my son who is allergic to nuts and eggs. I found a good mix that we use for pancakes but in order to make waffles with it you have to use egg or egg substitute. Well, we can't use egg!! Anyone know what I can use as a substitute? I read on-line that you can use one tablespoon for every egg but I wasn't sure if this was accurate. any ideas?

My son is also allergic. We use the milled flax seed. you can get it at walmart. it's not the same, but still a very good taste ands very good for you! :)

We use 1/2 a banana for each egg. You have to add 1/4 teaspoon baking powder to the dry ingredients for each 1/2 banana. It works great for our chocolate chip cookies!

If you combine one tablespoon flax meal with two tablespoons hot water and let it sit for a few minutes it turns into a gel that can be used as a sub for one egg. Try mashed banana or applesauce. I've found that each recipe calls for a different substitution so you have to experiment a bit. Also, check out some vegan cookbooks - I think that recipes designed without eggs are always better than trying to make substitutions.

I had always had food allergies, so I can empathize with what you and your son are going through. I was allergic to what seemed like everything (eggs, peanuts, some fruits, beef, corn, caramel color(sodas)....). I am very lucky to have outgrown most of my childhood allergies. I went to a specialist in Atlanta when I was about 10 and he did some different kind of tests; he discovered that my egg allergy was actually exclusive to the egg yolk. That opened up soooo many different foods that I could finally enjoy as long as they were prepared with whites only. Your son may or may not be allergic to egg whites. Its a great thing to have tested if you can because its sometimes really hard to get a good taste and texture with egg substitute. If you can't do egg whites Ener-G egg replacer is probably best. applesauce is a great binder and tastes great I use it in baking all the time instead of egg ( about 1/4 cup or less per egg) and heard mashed bananas never tried.

You can buy egg substitute at a health food store and it has directions on how to substitute. Yes, it works. Today a friend gave me grown flax seed and said 1T of it for 1T water works as a 1 egg substitute.

It's always good to look up vegan recipes - b/c they don't use eggs (vegetarians use dairy/eggs, but not meat).

Get to your nearest health food store and pick up a box of "Energ Egg Replacer." Its made from Potatoes. You have to mix it with water and then add it to your recipes in place of egg. Of course, it wont scramble up like an egg would, but works great in baking. I make a lot of vegan food, and vegan bake goods, and I've always had good luck with it.

here's one i found online

Ingredients
--------------------------------------------------------------------------------
1/3 C oats
1/3 C bran
1 C whole wheat flour (may need to add a bit more)
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 Tbsp corn syrup
2 Tbsp applesauce
1 C buttermilk (or you can make your own low fat version by adding 1 Tbsp lemon juice to 1 c skim milk)
2 Tbsp melted butter

How to make it
--------------------------------------------------------------------------------
Mix all ingredients together. Let stand 5 minutes.
Pour 1/2 C of mixture into already warmed waffle iron (mixture will be sticky and thick- spread out evenly)
Cook waffles for approx. 3 minutes per waffle.

Do you have a Whole Foods, Trader Joes or a Fresh & Natural Foods near you. We purchase Egg Substitute. It does not have the nutrition value, but works really good. Try it with the waffles and you will have it for all of your other baking.

For each egg, use this:
1.5 TBSP oil
1.5 TBSP water
1 tsp baking powder

Mix the three ingredients in a separate bowl, then add together when you would normally put in the egg.

I know Cherrybrook kitchen has the pancake mix that is egg and nut free, but not sure if you would modify the receipe for waffles. Check Cherrybrookkitchen website. Otherwise, Here is something I used to make cupcakes. I just substitute the egg with 1 teaspoon on applesauce.
