There is an egg replacement product that you can find in most health food stores. It is in a box and is a powder. We used to make a whole bunch of waffles all at once and freeze them. Then take them out and put them in a toaster.
My son (3 yo) is allegic to eggs and we are used to having eggs every week morning. Is there anything that's I can use to replace the eggs? He already has a waffle with cream cheese (with the eggs). The egg just gave him a little extra protien to make him feel fuller longer.
1. The allergy is to egg whites, but the doc said to stay away from the whole egg - at least for now.
2. He's been on Zyrtec, so we haven't seen the rash (he was off it of a few days for his allergy test and now has rashes everywhere). I hate giving my kids any medication that they don't absolutely need.
3. Beacuse his allegry is bad but not severe, the doc seems to think it's ok to eat food with a little egg in them (like purchased waffles).

I have a vegan son. You can crumble up tofu and add some tumeric and saute it and it is pretty close to egg-tasting and tofu has lots of protien. Also, what about peanut butter toast. That's a good source of protein too. Also, in baking you can substitute applesauce in sweet recipes and it will bind the ingredients just like an egg would, or in other recipes where the underlying "apple" flavor of applesauce wouldn't mix in well, mix 2 tspns cornstarch with 2 tspns water for every egg called for in the recipe and it works just like an egg. Mix the cornstarch and water together and beat it just like an egg, then pour that into whatever recipe you're making.
Run a google search on "tofu quiche" for a make-ahead, slice and serve breakfast. Also, breakfast burritos with beans are just as good and have lots of protein.

How about a slice of toast with peanut butter - lot's of protein in peanut butter.
My son can't eat any eggs at all. For protein in the morning, I give him tofu or sausage most days. He loves both.
When we bake, I use the following mixture to replace eggs in the recipe:
1.5 TBSP oil
1.5 TBSP water
1 tsp baking powder
It works in pretty much anything!
I would avoid everything you can with egg in it for at least 2 weeks and get him off the Zyrtec. Once he's off and isn't exposed to any egg you can start giving him some foods that have a small amount of egg. It should be one of the last ingredients. Our friends son was allergic to eggs and I understand how limiting it can be. He ate oatmeal a lot for breakfast, toast and fruit. She used bisquick mix (egg was furthest down on this brand compared to others) and no matter what she was making (biscuits, waffles, pankakes) she would just add water and nothing else. He was also allergic to dairy making it even more difficult. The pancakes and waffles turned out good and he never knew the difference. He never broke out in a rash from it. You could always cook sausage or ham or give string cheese to help him git protein.
Some kids do grow out of it. He is now 7 1/2 and just got tested, he has finally outgrown all his food allergies and can't wait to start eating real cheese instead of soy and trying milk. And being able to eat pizza without taking the cheese off. =)
I would rather not give my kids a food and have them be medicine free than give them allergy medicine so they can eat the food. Luckily your kid doesn't seem to have side affects from the Zyrtec, some do and it can be severe. I fyou google it you'd be surprized how many kids have severe mood swings and become different kids while on it. My friends son took it for about a week and he bacame one of those kids. He would get frustrated and have full on meltdowns like the worst terrible twos you could imagine, only he's 7 and normally didn't do that. They did research on google and found that its a common side affect. He was back to himself about a day after getting off of it.
Even though it seems hard to do without eggs entirely, I think it's better to just bite the bullet and don't do any egg at all. Once you are used to eating other things and reading labels it will be much easier. You will also realize that it is much easier to handle than some other allergies like nuts, wheat etc. You will also see that kids are more adaptable than we give them credit for and will be ok on an anti-egg diet.

Try using other protein substitutes. I love eggs, but because my family has VERY high cholesterol naturally, I can only eat the whites or something else altogether. There are fake egg substitutes, but they taste a little funny. You can always give your children oatmeal and grains for breakfast. The complex carbs will keep them full longer and fill them up. They are also really good for their intestinal tract as well.
Another option is to do meat products in the morning, such as a little chicken or ham or turkey or steak with hot rolls and fruit. I love meat, potatoes, bread, and a side of applesauce or something.
Another option is to do a shake- blend up fruit and a little milk or water, add some protein powder, and serve. Great for the summer times, maybe a little too cold for the winter.

My kids love Morning Star farms sausages. Good meatless protein, but does have soy (which can be an allergen apparently).
Regular sausages or ham slices would be an option, too.
We make turkey sausages alot for breakfast for our kids. Jennie-O has both links and patties that are quite tasty. We will cook the whole package and serve the leftover the next day to safe preparation time.
Both of my kids now request the turkey sausages over any others.
I have an egg allergy and I'm allergic to the whites. The doc told me I can eat a little but it always ends up making me sick anyway. It takes 4 days for the allergen to get out of the body. A tiny bit of egg every 4 days might be okay.
I use applesauce instead of eggs. I use it in muffins, waffles, pancakes, etc. Replace one egg with 1/4 cup of unsweetened applesauce. Tastes great too!
The allergic reactions aren't always a rash. When I eat eggs my mind gets a little bit cloudy and I'm not quite as sharp. The best thing to do is avoid it all together if you can.
