I usually make quiches.
I am by no means a cook but am hosting brunch on Sunday. I need to make everything on Saturday during the day and bake it on Sunday. I have no clue what I'm doing. I am hoping to make some sort of monkey bread or coffee cake doughy thing, but I need something for the protein portion. Ideas? Thanks!

Easy Breakfast Casserole
8 eggs
1/2 cup heavy cream
1/4 teaspoon sea salt
1 cup shredded cheese (I use white cheddar, but you can use whatever cheese you want!)
Begin your casserole by whisking together the eggs, cream and salt. Pour the ingredients into a 9×13 inch casserole dish. Sprinkle in any “add in” ingredients you wish. Stir them around with a fork. Top casserole with cheese. Bake in a 350° oven for 30-40 minutes, or until the middle doesn’t jiggle.
Add In options:
Cooked sausage (I have a wonderful recipe for turkey sausage here.)
Chopped ham
Chopped and cooked bacon
Leftover baked potatoes, cut into chunks or shredded into hashbrowns
Sauteed veggies
Add anywhere from 1/2 cup to 2 cups of any of these “add ins”. You can use a different sized casserole dish, you’ll just need to adjust the bake time. The thicker your casserole, the longer it will take to bake.

Overnight French Toast Casserole
1/2 cup butter, melted (1 stick)
12 - slices Texas toast or any leftover bread
1 - cup brown sugar
1 - tsp cinnamon
1/4 - tsp nutmeg
1/2 - cup chopped pecans (optional)
1 - tsp vanilla extract
5 - eggs
1 1/2 - cups milk
Melt butter and pour in a 9x 13 . Mix together brown sugar, cinnamon, nutmeg and if nuts if you are using them. Whisk eggs, milk & vanilla together.
Layer bottom of pan with half the bread pieces Sprinkle half brown sugar mix over the bread. Layer second half of bread. Pour egg mixture over the bread slices, making sure all are covered evenly.
Sprinkle remaining brown sugar on top. Cover and refrigerate overnight.
In the morning, remove from the refrigerator and cover with a new piece of foil. Preheat oven to 350 bake the casserole for 30 minutes. Uncover and bake 15 more minutes the french toast bake should be browned and set.
I like to remove mine from the oven and pour some maple syrup on top and place back in the oven to caramelize for about 5-7 minutes
Google Egg Strata recipes. There are tons of different variations out there. I make it every year for Christmas. Super simple to make the day before :)

They taste like quiche but no crust, They are easy to make, you just lay a piece of ham into each circle on a muffin tin and pour the ingredients in, and bake. They reheat very nicely. I would suggest that or a quiche or the deviled eggs like someone else suggested.
My family LOVES deviled eggs. Loves them. We all get together (there's 17 of us) and have a brunch and it's usually some kind of coffee cake or bread along with deviled eggs, sausage, fresh fruit, and juice. Yum!
I personally prefer quiche to egg casseroles. They reheat just fine the day after. As far as a doughy thing I would go with french toast casserole, it's my favorite make ahead breakfast dish!

made one but did not save recipe. There are so many out there. Easy,
the sit overnight in frig and bake in AM.
Large quiche
Pie crust patted into large pyrex pan and partially prebaked
18 eggs
1bunch green onions chopped
1pkg knor leek soup mix
1 pkg shredded cheese
1pkg cream cheese
if you enjoy meat canadian bacon that has been browned and chopped or cooked crumbled bacon.
bake until firm and golden abd bubbly on top.
I swear by any type of "Strata" for a brunch the next morning. I make an egg/cheese/bacon one (basically take white break, milk, egg, cheese, bacon and layer, soak over night cook next morning) or a french toast strata (basically take cinnamon/raisin bread, cream, syrup, apples, cream cheese, soak over night, cook next morning) and a cheesy potato type side. I am not at home so I can't send you my recipes but I'm sure if you search on recipes.com or cooks.com you'll find great recipes. I cook both at the same time... they turn out wonderfully and people LOVE em'. Good luck. You could also have some fruit on the side and bagels for kids and perfect :)
A friend of mine says "why make it when you can buy it."
(And just heat it up prior).
That is her way to reduce the "stress" of Hosting some of her events.
Of course she does cook and make some things and is very capable.
But she is not beyond, just buying a few dishes too.
I personally do not like egg dishes, that are made the day before.
This is the BEST make-ahead breakfast/brunch dish I have ever made.
Creme Brulee French toast!
