Does anybody have any easy crock pot recipes they can recommend? I don't eat beef or pork so I'd like easy recipes for chicken, turkey or vegetarian. My husband and I are expecting our first child any day - a baby girl. We received a crock pot for our wedding (many years ago). I figure now is a good time to learn how to use it. :-)

You've gotten some great responses! I'm always looking for more recipes for my crock, too. One additional thought - for some chicken soup type recipes, you can use canned chicken instead of cut up cubed chicken. It is not as healthy because of sodium, but it is faster. I haven't found a problem with overcooking it either. It is still plenty tender!

Ridiculously easy chicken recipe that can be used for tacos or to put on tostadas.
Take 2 or 3 large boneless and skinless chicken breasts. Put them in the crockpot and pour salsa over it. (I just use Pace medium salsa the kind you buy in the large plastic jug with the handle. Put enough salsa in to cover the chicken. Set the crockpot on low and let it cook for about 6 hrs. When it is done the chicken will be super soft and you can pull it apart with a fork (it will be like shredded chicken). Cut some lettice and tomatoes and use the chicken to make tacos. Very easy and super tasty.

Hi L.! I LOVE the crockpot. It's by far one of mom's best friends, though cleanup can be a pain sometimes.
Anyway, here's one of our favorite crockpot recipes, though I'm sure as other mom's have listed, there are million crockpot recipe websites. Here goes:

White Chicken Chili (from menus4moms.com)

4 chicken breasts, cubed
1 cup chopped onion, cooked
2 cloves garlic, finely chopped
1 1/2 cups chicken broth
1 tsp ground cumin
1 tsp dried leaf oregano
1/2 tsp salt
1/4 tsp Tabasco sauce
2 cans (about 15 ounces each) great northern beans, drained, rinsed
1 can (12 to 15 oz.) corn, drained
2 Tbsp. chopped fresh cilantro, optional

Mix onion, garlic, chicken broth, cumin, oregano, salt and Tabasco in 3 1/2 to 6-quart crockpot. Add cubed chicken breasts. Cover and cook on low for 4 1/2 to 5 1/2 hours, or until chicken is tender (this may vary depending on how hot your crockpot cooks). Stir in beans, corn, and cilantro, if using. Cover and cook on low 30 minutes or until thoroughly heated.

I have a yummy, but not the healthiest recipe. I make it once and a while.
Take frozen boneless, skinless chicken breast and put them in the pot, add 1 can cream of mushroom, one can of cream of chicken, one package of cream cheese and a packet of the dry ranch dressing mix! I like to stir all the ingredients together first but you don't have to. Cook on low for 8 or high for 6 check along the way and stir if you can. I serve it over egg noodles, it is delicious the chicken falls apart.

Here is a very easy chicken & rice casserole that our family loves! I have sent it to work with my husband to feed his coworkers and they love it too. Mostly, I love that it really feeds tons of people for super cheap. I sometimes double the recipe, and that makes 2 large 9 x 13 pans of food.

CHICKEN AND RICE CASSEROLE

Ingredients:
3 frozen chicken breasts
2 cans Cream of Chicken Soup
1 box Cream Cheese
1 package Italian salad dressing mix
3 cups rice

Crockpot:
Bake chicken (frozen and cut up into cubes), cream cheese (cubed), cream of chicken soup, and italian dressing mix in Crockpot on Hi for 3 hours.

Cook Rice (in rice cooker or instant on stovetop). Spread rice on bottom of large casserole dish. Spread chicken mixture on top, serve.

We just put a large turkey breast in the crockpot! I thought is was odd, but I was told it was great. So I got the larger breast, a large box of stock, some potatoes and some carrots ~ dinner was great! You want just enough soup to steam the turkey not submerge it. You dont get the crispy turkey skin but your not suppose to eat that anyone (some people say its bad for you LOL)
The other one we do like is chicken breasts, cream of chicken soup, cream of broccoli soup and fresh broccoli, mix it together and serve it over brown rice.
There are alot of ideas, we do a roast and use the left overs in tacos or enchaladas, but you can do that with either the chicken or the turkey.
Cook on LOW for 8-10 hours or high for 5-7. Good luck to you and CONGRATS on the new baby ~ what a wonderful gift.

Sandra Lee has a few different books called Slow Cooker Recipes. I have two of her books and absolutly love them. She has lots of other things besides the boring beef roast. There are lots of chicken, turkey and even vegi. I have also modified some of the beef to use for chicken. My son won't eat any meat other than chicken so I have to be creative!

My husband and I love to do beef stew in our crock pot, and when my vegan sister visited for a couple of weeks, we did a vegan stew. You can find a vegetable broth mix with the more natural soups/chili at a normal grocery store, and then put all kinds of veggies in it, we especially love zucchini, green beans, potatoes, red peppers, and lima beans in our stew, but you could really put anything in there. You can look up any crock pot stew recipe online, but you do need some flour and some other simple spices. We've also done jambalaya and brunswick stew (which is chicken and ham, but you can just do chicken) in the crockpot, we just change the recipes a little to match our tastes.

Just yesterday I went on line to get easy crock pot recipes...There were tons, just go to google and type in (Easy crock pot recipes) My favorite that I have done before is Chicken breast with cream of mushroom soup...GREAT and so tender...We actually sautéed portabella mushrooms in butter and garlic and add that to it as well....It is simple...You can either cook your chicken the night before then add it all together in the morning cooking on low all day or put it all together without cooking the chicken first and let it cook all day on high....Good luck and happy crock potting...Also congrats on your little new miracle joining you soon!!!!! I put chicken breasts in the crock pot and a jar of Green enchilada sauce and let it cook. Then serve in corn or flour tortillas. So yummy and so easy! Save any leftovers and make tortilla caserole with cheese and a can of cream of chicken soup or sour cream with layer tortillas. Best of luck! Also I always add barley to my crock pot stew recipes it gives it a nice texture!

I don't have any specific recipes to recommend - I usually just google "slow cooker" and whatever meat I have "chicken breast" and I am always finding great new tastes.

But I wanted to respond with a few hints

1st - make the max amount your cooker will hold and enjoy it that night, then freeze the rest in smaller serving amounts for easy defrosting meals - I have to cook a lot less this way, only fixing a side some nights

2nd - once you have made a few meals in the cooker, you will realize that you can create almost anything with what you have on hand - sometimes I just throw in the root veggies that are alomst "done" in the fridge, the half empty jar/bottle of something and meat - when I'm done, I've cleaned out the fridge and made something new - it is soooooo easy and VERY hard to screw up

-chicken breast with a jar of salsa-instant tacos!
-chicken or turkey breast, cream of chicken soup and a box of stuffing
-chicken enchiladas-layer cooked shredded chicken, enchilada sauce, cheese and tortillas.

Get "the Fix It and Forget Cookbook" which has tons of great recipes. There is a low fat version of this book too. Target usually carries both. I recommend you also buy the crock pot liners at the grocery store. Clean up is so much easier.

First off, congratulations!

Secondly, do a web search for 365 days of crockpot recipes. A lady made a challenge to herself to use the crockpot every day for a year in order to save money for the family. She recorded her experience in a blog and organized it so people like you and me can try her recipes! I'm sure lots of them have beef and pork in them, but you could always sub tofu or chicken or fish or just leave it out all together.

I love my crockpot, and now is a great time to use it! I like to check out books from the library, they have crockpot cooking books there. You can check them out for free and jot down the recipes you like. My daughter is almost one, and i like making vegetable soups for her in the crock pot as well. It will be good for the whole family! I have used this book for years.

It's called "Fix-It and Forget-It Cookbook Feasting with your Slow Cooker" by Dawn J. Ranck and Phyllis Pellman Good.

Congratulations on your new baby.

Great idea to start using the Crock Pot. You can leave it on for hours and not have to worry about burning the house down. There are all kinds of recipes you can substiute meats and vegetables.

Ok, I came to check it out because I wanted to make sure that the Crockpot Lady was on the list of recommendations. She had a crockpot recipe a day (365!!!!) Some are non-food items but she has TONS of wonderful meals. Just yesterday I made her Chicken and Dumplings meal and it was AWESOME!!! My husband loves her blog and will go to it weekly and pick out a new recipe for me to try for the week and then I get at least one pick. I try to use the crockpot at least 3 times a week or more. SO helpful when dealing with 3 kids and their crazy schedules. LOVE MY CROCKPOT!!!!

1) Pour in frozen (turkey?) meatballs. Add your favorite spaghetti sauce. Cook all day. Make meatball sandwiches when you get home.
2) Put in chicken (legs or breast). Add your favorite BBQ sauce. Cook all day. Make BBQ Chicken sandwiches when you get home
3) Put in a whole chicken. Sprinkle with salt & pepper and your favorite herbs. Add your favorite veggies - carrots, celery, potatoes, etc. Pour in a can of cream of mushroom soup. (or squeeze a little lemon on top and use cream of celery soup). Cook all day.

Also check out crockpot.cdkitchen.com, kraft.com, allrecipes.com, cooks.com. All have great recipes. Kraft.com also has some easy ones and good freezable ones for those first few days after delivery...

PS - the best chili recipe ever:
several cans of beans, drained (the more variety, the better it is: black, pinto, white, chili, etc.)
a jar of salsa
a packet of chili seasoning
1-2 jars of minced tomatoes or tomato sauce - depending on how chunky you like your salsa. Add enough to get the "right" consistency.
You can also add chicken, ground meat, shredded pork, or no meat.
Put everything in the crockpot, stir and cook on low for 4-12 hours (it just gets better and better).
Everyone who's ever tried this, including my kids - LOVE this.

hello, if you like mexican food I just made a yummy/hardy meal for my family. shred some chicken, marinate it in salsa. chop up some red onion, saute them. put the chicken in the crockpot with the onions, a can of enchilada sauce, black beans, corn, seasonings of your choice, you may need to add some water or chicken broth for extra moisture...towards the end throw in some uncooked rice...cook on high for 2-3 hours or until everything is done or low for a longer period of time. You can eat on tortilla's with cheese and sour cream or with chips...if you have room in your crockpot you can also add extra broth or enchilada sauce and make a soup which I did with leftover turkey over the holidays...just be creative!

I don't cook much but am getting more comfortable with the crock pot, I've learned that you can't really mess anything up, just put the ingredients, in and check it every hour or so...enjoy!

I found some of the best crockpot recipes right online. But this one is GREAT, hands-down!

Crockpot Sweet&Sour Meatballs

INGREDIENTS (Nutrition)
1 (16 ounce) can sauerkraut
1 (16 ounce) can jellied cranberry sauce I used grape jelly)
1/2 cup packed brown sugar
1/2 (16 ounce) jar spaghetti marinara sauce
3 pounds small meatballs (I used ground turkey)

DIRECTIONS
In a medium bowl, mix sauerkraut, jellied cranberry (grape) sauce, brown sugar and spaghetti sauce.
I personally browned my meatballs in the oven for about 10 minutes.
Place meatballs in a slow cooker set to low. Cover with the sauerkraut mixture. Cook 3 to 4 hours, stirring occasionally.

I know it sounds wierd, especially since I had NEVER eaten sauerkraut... but it's a great combo.

Crock pots are fantastic! Especially for new parents. I'm a mom of a 15 month old, and a full-time grad student, so they're essentially all my family eats. There are two cookbooks I live by. One is 125 Best Vegetarian Slow Cooker Recipes by Finlayson (published by Robert Rose, 2004). The other is Better Homes and Gardens' Biggest Book of Slow Cooker Recipes (Publisher Meredith Books, 2002). The Better Homes one has chapters using different ingredients, so you'll just want to avoid the one with beef, pork, and lamb. It also has a vegetarian chapter, a dessert chapter, a chapter using only five ingredients (if you're really in a hurry), and a chapter for soups, stews, and sides. It's a great book.

Our family favorite...

Chicken (frozen) cook for 8 hours/ defrosted, cook for 4-5 hours
Add: I pkg of lipton onion soup and 1 can of stewed tomatoes or salsa.
Serve with rice....

recipe also good with fat free italian dressing instead of the onion soup. use 1/2 bottle.

Yum... low calorie too..

I see lots of others have recommended the "Fix it and Forget it." I have it and definately recommend it also. One chicken recipe that I can give you I make regularly and can do it off the top of my head. It's called Sloppy Chicken.

I use two cans of chicken.
1 can cream of chicken
1 can cream of mushroom
1 can chicken broth
1 stack of Club crackers

Cook if for like 2-3 hours and serve over your choice of noodles. I use the no-yolks noodles. You'd have to check the cook book for the exact time and temp. I usually judge for myself on high or low depending on how much time I have before we want to eat. And it says to add the crackers at the beginning, but for myself I prefer adding them closer to the end. Like the last hour or last half hour. Hope it helps.

I bought my parents a great book on "low cooking" receipes at Costco. There are SO many yummy recipes for all types of dishes. it was well worth the $18 it cost as they use it all the time.
