When I was a kid I ate milk-bones, but my parents didn't like it then and I don't suppose I ought to recommend it now.
I think the most important thing is to get snacks that you can eat frozen or that won't freeze and worry about the theme later. I used to do a lot of winter hiking and a thermos of hot tea or hot chocolate was great to have. You can put some education into it by having them make their own pemmican, which is a native american historical trail food. You'll have to google it and then modify it for modern times. Other than that, all I can think of is the traditional trail mix sort of thing. I'm not very good at the theme stuff.
