There is an app for Disney Parks and Attractions that gives you the specific wait time for every ride - both fast pass and regular.
If you have an iPhone or Android, go get the free app called Mousewait. It is so worth it! There is a lounge section with very helpful people. There is also crowd indexes as part of the app.
I've never been to Walt Disney World but we go to Disneyland all the time and this app is the best and most helpful.

I would go Tuesday or Wednesday. If you have small children you will want to go to Magic Kingdom in the morning time. That is when most of the Charachters are out. Also, you might want to check out mousesavers.com for some deals & advice. They might even have some posts of special things going on that week.

best days are tues to friday am , worst days are friday pm - monday.
Most people go to Magic Kingdom first so Friday pm - monday you are looking at people just arriving in for their vacation.
Are you going on the same day or different days ? If you are going on separate days I would go to the magic kingdom on monday. There are magic hours the night before and people don't usually go to the same park two days in a row . Also the park is open until 11 on monday and you can see the parade at 9 or 11 (the fireworks are at 10). I would go to hollywood studios on tuesday because they also have magic hours the night before.Whatever you do , you must get to hollywood studios and get your fast passes for Toy Story as soon as you walk in the park. Otherwise you may have to wait hours and the fast passes go quickly . It is our favorite ride and cant be missed. If you go on the same day I would do monday but go to hollywood studios first . Have a Magical Trip !!!!
Go to whichever park does not have magic mornings or extra hours at night. They tend to be the least busy. Just look at the Disney schedule
I've heard that although Mondays used to be great, they are now very crowded because people extend their vacations a day on either end of a weekend. We were there just two weeks ago and we used free app on an ipod to check the daily expected crowd levels and Monday was the worst for Magic Kingdom. The app was Undercover Tourist as someone else mentioned-they have a web site too. We went to Magic Kingdom on a Thursday because the app showed it as a yellow (med. crowds) and it was great. Once we waited 40 min for the Big Thunder railroad but otherwise there was no ride longer than half hour and most were 15-20 minutes. Then we went to Animal Kingdom on Sunday which showed green and it was unbelievable how slow the park was. We went on Everest Expedition several times in a row both in the morning and in the afternoon. Depending on the age of your kids, if you want to get on Peter Pans Flight at the Magic Kingdom, go there first or at least get a Fast Pass because the waits for that ride are crazy no matter how slow the day. The app of course is more accurate the closer to your travel date so check it several times and be flexible enough maybe switch your schedule around on what park looks better on a given day. Have a great time and pack ponchos for the parks. It stormed every day but only for an hour or so and it did scare off some of the visitors.
I have heard that Superbowl Sunday is the least attended day for Disneyland.
This time of year it doesn't matter, they are always busy because this is peak season.
Check out undercovertourist.com. They have a "crowd calendar" with suggestions for which parks to visit on which days. They recommend that you avoid parks with "extra magic hours" unless you are staying on property and can take advantage of those. They also have some touring plans that help you organize your trip.
